  • Quite a good day today, managed to get out to local shops and library so in daylight for a couple of hours should sleep well tonight.
    Throat still tickles and goes dry and cough is not completely gone but feeling much better. Going to get to bed soon.

    Several coffees drunk today, need to ensure I have more water tomorrow.
    Brazils, walnuts and pear.
    Lentil and bean stew with beetroot and spinach. One portion left frozen for another day.
    Mint tea and friend over for a couple of hours for chat.

  • The aubergine and fennel bake sounds yummy , do you have the recipe please , 3 of my favourite veggies


    janiebaby This is the recipe for aubergine fennel and tomato bake (originally from “Microwave Gourmet” by Barbara Kafka).

    I’ve tweaked the amounts because the size of the vegetables varies, and whether I’m eating it as a main or a side.

    For one as a main meal, I use a third to a half of an aubergine, the same of a bulb of fennel, and two/three medium tomatoes.

    Cut the aubergine and fennel into slices or chunks as you like (I do triangular chunks a bit smaller than the tomatoes), score the tomatoes so they don’t burst, (you can halve them, but then they tend to lose too much juice).

    Arrange them on your dish or plate however looks good, put in a couple of peeled & smashed garlic cloves if you like, sprinkle some thyme or basil, drizzle with a tablespoon or two of olive oil, sprinkle salt & black pepper to taste. Cover and put in the microwave. Mine is 750 watts and I cook this for 7 minutes at full power.

    If I’m not trying to lose weight, I’ll add some chopped nuts, pine nuts, or grated cheese after cooking.

    As a side dish, it goes well with fish, chicken or lamb; I haven’t tried it with beans or lentils but I think it would go well. I’ve never used rice or potato with it as I find the vegetables are filling enough.

    A bit of an essay, but hope it helps. :)

    s_glover Well done for giving blood and I hope you're feeling better now. Sorry you couldn't make your spinning class but it's better not to push yourself and make things worse if you're coming down with a lurgy.

    Blue Doggy That sounds like a lovely lunch with friends and well done for getting sponsors on board, even if you did have to take a bit of teasing for it.

    Sirens Well done for not giving into cravings after a hideous journey. If my trains were that messed up I would probably have gone to the pub until things had calmed down and then got something really unhealthy to eat!!

    janiebaby Well done on sticking to the plan, the willpower fairy seems to be doing the rounds at the moment :)

    procrastinator I'm glad you're feeling better and getting out and about in daylight is always good. I'm glad that the mornings are getting a bit lighter now as it's not completely dark when I leave the house.

    Bfh Well done on the loss, especially when you were worried after the weekend.

    Molly That's some very good plodding, well done!! I can fully understand not addressing people personally - the only way I can manage it is because I have two screens at work so I have to leave myself reminders on one and type on the other. If I was trying to scroll back and remember what people had typed I hate to think how mixed up everything would get :rotfl:

    I'm pleased that I managed to stick to the plan yesterday, I now just need to resist the lure of the biscuit tin as I'm working from home today. On the plus side, I managed to get today's C25K out of the way before work so I can have a leisurely lunchtime stroll to get the step count a bit closer to 10k.

    I'm hoping that today's food will go something like:

    B - mushrooms on toast
    L - leftover mushroom roast
    D - toad in the hole and veg
    S - I'd like to say none but who am I kidding, my parents are coming over, there'll be wine :D

  • Morning everyone, life has taken over a bit and I haven't managed to pop online daily to log my food diary... however, I'm pleased to announce that I've lost 2lbs this week!!

    Well done to everyone for their weight losses this week!

    Blue Doggy yes good to get back to normal but I enjoyed it very much :)

    I couldnt weigh myself today or yesterday. We’ve had a bad storm here and the scales I use are on a beach front chemist so they didn’t have the scales out (which is understandable). I will probably leave it till next week to do it now as I might not get the time too until then.

    B - weetabix with milk and honey
    L - kinda Mediterranean chicken thingy I threw together. Chicken breast, sweet potato, red pepper, onion, tomatoes, passata, paprika, garlic granules, black pepper. Baked in the oven and tasted very nice. I had a cheeky kit kat after though :)
    D - lentil soup with seeded bread. Greek yogurt after

    E - still doing my walking which is entering the latter stages now. Sunday I had a low day so playing catch up. I need to do a minimum of 16,700 per day to reach the 500,000 which is achievable as I’ve been doing that most days

    I've lost 0.8 lb since last week's weigh in, my scales have increments of 0.2 so I'll be happy with a 0.75 or whatever you have in that range :rotfl:

    Reporting in with another 3lb loss this week.


    Not going spinning was definitely the right decision last night as by the time I got home I felt like I had a temperature and no energy. Was in bed not long after 8pm. Didn't have the best night's sleep but at least I was resting.


    My throat feels better today but I still feel lethargic and pretty sick. Feeling better when I have eaten something. Decided to take it easy so have been working from home today. I'm hoping a day of relative rest will mean I'm feeling better tomorrow. It's ages since I've felt like this, I don't really do being ill!


    Hope those of you who are feeling rough too are on the mend soon.

    thankyou , I do have salmon defrosting and will make this to go with it . I've already had porridge oats and pasta salad for my meals today so this would balance it out , was going to do salmon and asparagus rissotto but this would be better as I don't need to use wine or cheese :):) wondering if I can cook it normally in the oven ?
