Yes I'll get it submitted before 14 days and I'll hand it to the court in person.
Does a copy need to be sent to premier park or bw legal?

    Read your Claim Form.
    In particular, the box headed:
Address for sending documents and payments

BW Legal of course, why would anything go to the PPC when they are using a solicitor?

Sorry I have baby brain as an excuse having a newborn baby.
    I have 2 questions
    1. Can I email my WS and evidence to BW legal as I don't think they deserve the postage?!
    2. In my WS do I bother to state why I was there (children's ice skating party and bought ticket but was late back as talking to manager) or just stick to the two reasons in my defence which are poor signage and abuse of process?

Looking to get this finished in next day or two. Thanks for all your continued support.

Check on your court claim, it will tell you to whom and by what method you should serve papers. The formal advice is via post, unless the claimant/solicitor has specifically agreed to electronic exchange. If it's not there, then be safe and post (and email too, so there's no argument that they've received nothing).

Your WS is your account of matters on the day.  However, I wouldn't be including any details that might 'incriminate', like any admission (for the reason you express above) of an overstay (if that's what your PCN is for).
Please note, we are not a legal advice forum. I personally don't get involved in critiquing court case Defences/Witness Statements, so unable to help on that front. Please don't ask. .

I provide only my personal opinion, it is not a legal opinion, it is simply a personal one. I am not a lawyer.

You need to attach evidence of being a genuine patron, and the usual evidence such as signage photos that help your case, and a copy of the Beavis sign to compare it to (Google...) and the CRA 2015 and the POFA 4(5) and the Beavis case paragraphs 98, 193 and 198, and the 6 page Southampton approved judgment from DJ Grand, giving his reasons for striking claims out without a hearing when they include a false £60.

A genuine patron of the ice rink for the purpose of my visit do you mean?
Does it matter if the WS has repetition of my defence but is referring to evidence attached like you mention - signage and approved judgments? Hoping to finalise tomorrow.

It's ok if it expands on those points and provides numbered evidence in the form of your initials followed by a number , as in abc01 etc , and yes , a statement of purpose of the visit plus proof of patronage
