    Boil and peel, cut into small cubes and stir through Mashed tatties...

    That's how my nieces quite liked it when I served it. It wasn't till later that I found out they don't like beetroot but they 'didn't mind' it in the mash.

    It also freezes well, I bake in the oven for a couple of hours, peel, use what I want and then slice the rest and freeze it. When it comes out it can be roasted with oil and thymne, heated up in orange juice etc.... we all eat it, but DH loves it most, so I tend to freeze four or five slices together in a bag so he can have a portion whenever he wants :-)

    Also, tell your veg box supplier that you will have to switch if you keep getting something that you don't want!

    No idea if this has already been posted (can't be bothered to read the whole thread) but there is a recipe for Creamy Beetroot Risotto on the Good Food website.

    It's a bit messy to make, the whole kitchen ends up turning pink! But the result is very tasty.

    Has the side effect with me of turning my wee pink and as for the poo.... :o

    Consequently, I haven't a clue on how to prepare, store etc.

    Hello :) I've been making this cake for 3 years now and it is awesome every time. I even made it as a tier for my wedding cake last year and will be doing the same for my sister-in-law's wedding cake this year. It's a chocolate and beetroot cake and it's soooooo yummy.

    I love cubed beetroot. I bought some fresh & cubed it, then stored it in vinegar in a Tupperware box in the fridge.

    I prefer it unvinegared, is there another way of keeping it?
