    I love beetroot, so not sure if any of these will appeal to someone who doesn't like it. But they sure appeal to me! :phttp://www.lovebeetroot.co.uk/recipes/

    It's not the healthiest option, but Harry Eastwood did a chocolate fudge cake which used beetroot in the original Cook Yourself Thin series. I haven't tried it myself yet, but it always seems to get great reviews from others who have. Found a copy of the recipe here... Chocolate fudge cake recipe

    Have you asked your veg box people if they could replace the beetroot with something else, even if it means doubling up on other items? May be worth a try

    You should be able to ask for no beetroot. I have a veg box and have specified no rhubarb, sprouts, extra bananas etc!
    Must get organised and rejoin grocery challenge!

    At church buffets when we were younger, there was always a bowl of blackcurrant jelly with grated beetroot in as a side dish. As well as orange jelly with grated carrot in it. That was nice and refreshing, but you couldn't use a lot this way.

    Ah just rung them, and no they don't allow substitutions. To be fair, in the past it has meant we have tried things we hadn't had before (such as romanesco cauliflower - lovely, and jerusalem artichokes which we all now love), but last winter beetroot featured week after week after week.

    Hmm, might have to try a different supplier...
    I try not to get too stressed out on the forum. I won't argue, i'll just leave a thread if you don't like what I say. :)

    My kids will eat it grated raw in a green salad - like the bags you get at MrT - or as crisps. My favourite way is to cook it and slice it, layer it in a gratin dish with a bit of grated cheese in between the layers, drizzle with cream (the tighter the layers, the less cream you need), finish with a bit of cheese and bake for 25 mins.

    I also have made Yukon soup - which was beetroot, potato, onion, 1tsp curry powder and 1tbsp maple syrup with chicken stock - and was much nicer than you think. I got the recipe off a Canadian recipe website on the internet - so if you Googled Yukon Soup you would find it

  • Have you tried roasting it in the oven? Its absolutely lovely like that - much nicer than boiled and soaked in vinegar which is how we always had it as children.

    Also you could try mixing it with garlic, pine nuts and olive oil for a very vibrant pesto sauce (is a bit sweet, but definitely edible). And another vote here for chocolate beetroot cake - you definitely can't taste the beetroot in that.

    Have you tried just boiling, peeling and eating them or roasting them as suggested?

    They taste very different to the pickled version. I can't stand the pickled stuff but love fresh beetroot!

    I love beetroot in any form but it is true it tastes very different raw, roasted or pickled.

    I was going to recommend in Chocolate cake but was beaten to it. :)
