    sorry, haven't done it in the micro, but my favourite way is to oven/remoska roast it - either unpeeled to cool and peel later, or peeled chunks. I put it in with a splash of olive oil, a couple of banged but not chopped garlic cloves, some chopped onion, thyme and s & p.

    Hi Primrose -t here is a whole thread about beetroot here. I don't like the stuff myself so can't help :)

  • Hi - it makes a great soup - fantastic colour, add a swirl of cream on top. Looks impressive to serve up to guests!

    Same but with balsamic vinegar as well. Yummy x Just do it when the oven is on as well and wrap in silver foil. Keeps well in the fridge.

  • I like to roast them wrapped in tinfoil with some olive oil, garlic, chilli and thyme or to boil them up and when cooked stir them into a sauce made of garlic, ginger, chilli, cumin, coriander and cardamom fried then added to approx 1/4 pint of coconut milk and some lemon rind and juice. Simmer for a few minutes and serve with coriander leaf sprinkled on top. It's lovely!

    Pink and zippy will be so proud, ( I hope!) i did an advanced search (thanks to the post on how to do it!) on icecream then on beetroot because I wanted to post and give them less work!

    I just checked on my beetroot Icecream ( I know its almost midnight and im checking my icecream but I dont have a machine and it needed beating!)
    and it not only looks good, but tastes it! yep beetroot icecream! I jest you not! I used a delia recipe for blackcurrant icecream and replaced the blackcurrant weight with beetroot, that simple!

    I made choc brownies according to a recipe I got help with from here, when trying to use up cocoa powder ( apologies to OP, it was a while back!) and intend to serve it with the icecream when it sets properly! ( I started it at 7 tonight! and it looks promising!)

    I have just harvested a few of the white beetroot I've grown this year. They're cooking as I write.

    I want to pickle them, but I've never pickled anything before. I have a big jar of Sarson's pickling vinegar, which is pre-spiced. It says to use it straight from the jar.

    So, do I just slice the beetroot, put it into a jar and pour the vinegar over the top? Is it really that simple?

    As the beetroot is white, will the malt vinegar make it go brown? It won't bother me if it does, I was just wondering.

    Hi MBE,

    I know that you said it doesn't really matter to you but as it's white beetroot, I'd be inclined to use white vinegar with your own pickling spices added to keep the colour as it is.

  • Hi - we've started adding beetroot to cole slaw - really cheers up the colour, and tastes delicious.
