I use grated beetroot to bulk out the mince in spag bol. It is lovely and makes the bolognaise a lovely deep colour. I am going to try and freeze grated beetroot in small quantities ready for use in the winter when the beetroot glut is over!!!0

Last Xmas I made the most delicious Festive Beetroot Soup I have ever tasted. I think I got it from the Tesco free magazine.
When we were abroad we had a lovely creamy pink concoction one evening amongst all the other salad stuff and it turned out to be natural yoghourt with beetroot and grapefruit. It was delicious and I made some when we got home and it was dead easy and a nice change.0 -

Beetroot is freezable (but you have to cook it first)
you could pickle some,
make a nice beetroot soup (borsht)

Hi all
I have now boiled and pickled a lot of my harvest but have 2 cooked beets left over with no jar or pickle juice left.
Does anyone know how I can store these in the fridge and how long they will keep?
Any advice would be much appreciated.0 -
They're quite sugary, so yeast or mould will grow on them probably within a few days I'd say.My TV is broken!
Edit: refunded £515 for TV 1.5 years out of warranty - thank you Sale of Goods Act! :j0 -

I freeze cooked beetroot very successfully. I usually defrost them naturally (i.e. not in the microwave because they have a tendency to spray everywhere!) and then either eat them cold with salad or use for chocolate beetroot cake. They do go mouldy after a few days in the fridge.0
