  • Boil until soft (1 or 2 hours) cool a little then peel off the skin and eat warm in cheese sandwiches , YUMMY ! Tastes very different from the nasty vinegar stuff.

    You can also add it to casseroles and stews as you would turnip or parsnip

  • We add beetroot to roasted roots. Chop carrot, swede, onion, parsnip, potato, beetroot into about 3cm cubes. Drizzle with garlic and olive oil, and add soem fresh herbs. Bake at gas 2 for about and hour until the veg are soft :D

    Sweet, Spicy, Slowbaked Beetroot - as an accompaniment to roast lamb - is a wonderful looking recipe. I've tried other recipes by this lady, and they've all turned out well, but not this specific one... good luck with it, whatever you do!

  • I love fresh beetroot, it's delish raw in salads, grated or diced. Also love it roasted tossed in a little oil, flavoured with garlic and rosemary or just roasted on it's own, I eat it as I would any other root veg. Never tried it mashed though, I bet it's nice with swede and garlic butter.

    Can't seem to see this on here already, sorry if it's in the thread already! How long does beetroot generally last when roasted? I roasted some about 2 weeks ago and it's been in the fridge since... would now like to pickle it and wondering if it will be properly past its best?

    too many comps..not enough time!

    Hi all,

    Id love to pick your incredible cooking brains! My brother has very kindly given me 4 beetroots from his garden but I don't know what to do with them.

    They are just smaller than tennis ball size. Do the have to be cooked like normal veg or can they be raw? Ive only ever had pickled beetroot which I love.

    Ideas gratefully received! :D

    I've been Money Tipped!
    I love peeled and grated raw beetroot mixed with some grated raw carrots, sprinkle some lemon juice on top and eat - yum! very pretty too!
