freeze the breans, i dont blanch mine just put them on an open tray and when theyre frozen bag them up..

There is a chocolate cake that has beetroot in it, my neighbour made it once and it was delicious, there is a receipe for chocolate and beetroot cake on here

OH grew too much beetroot but has pickeled three large jars. Runner beans I am freezing every week. Have enough so far to see us through the winter.Not eating them at present as we still have cabbages, leeks and carrots so keeping them to eat with our winter cabbages and parsnips. It will be strange to buy veggies again as not bought any all summer. Best crop of tomatoes ever this year also butternut squash.0

We don't have a thread on Old Style specifically about runner beans but if you have a look on google there are lots of links to runner bean recipes.

thanks all! dont eat cake so wont do that although it sounds 'interesting' and dont really eat pickled beetroot either! Think i will stick to chutney and freezing whatever runners I have left. .....and replan what I grow next year!0

My favourite beetroot recipe is from the Guardian.
It just needs three ingredients: onions, beetroot and cream;
you'll also need some sort of oven dish.
Fry some onions, till they are soft, layer the onions, cream and beetroot, ensuring the top layer is covered in cream.
Roast in the oven for about 45 mins on a medium heat.
It's really nice, if you use elmlea it would be slightly more healthy!0 -

I had some beetroot and other veg from an organic box to use so just threw in a slowcooker and tastes lovely so thought I might share as good beetroot recipes seem hard to find.
1 large beetroot, peeled and cubed
1 sweet potato peeled and cubed
handful mushrooms chopped
handful lentils
1/2 onion chopped
1/2 clove garlic
dash worcestershire sauce
seasoning
good tsp dried parsley
tsp mixed herbs
tsp celery salt
1/2 tin chopped tomatoes
heaped tsp sundried tomato paste
tbsp tom puree
Chicken stock
Basically put everything in a slow cooker. I think I had too much liquid and I must have used between 1/4 qand 1/2 pint of stock. Of course if you are veggy then veg stock should be fine. I also added some cornflour near the end to thicken as I hate runny sauces.
I served with sausages and spring greens but imagine it would go as a side dish with lots of things.
This made enough for 4 portions as a side dish.

i've been given some beetroot by inlaws, i don't know what to do with it, so its been in my fridge waiting for inspiration for about 3 or 4 weeks! :eek: looks fine though and i don't want to waste it, so what should i do with it?
hubby says he doesn't like beetroot and i know i don't like it in vinegar but i think i like it without.
