I made a yummy beetroot soup recently.
Chopped onion, grated beetroot, grated carrot, bit of garlic, load of stock, simmer for 40mins. I then blitzed and ate with stirred in yoghurt (recipe said to strain to leave just the juice and stir in yoghurt - i thought that wasnt very mse!) Can do the exact recipe if you want but i never follow them...0 -
i have to be in the mood for this. but when i was younger i used to have it cold , sliced in an sandwich with salad cream. yummyi forgot i liked this until was talking to someone little while ago.
i had some not long ago and posted a similar question as i felt there must be something i could do with it.
i'm sure someone mentioned a cake. i expect tho the threads might get merged so that might help u.0 -

Raw beetroot is good in 'pink coleslaw'.
I use (roughly) half a red cabbage thinly sliced
A couple of grated carrots
A small red onion, finely sliced
A beetroot, peeled and grated
Add a teaspoon of white wine vinegar to some mayonnaise and mix with veg. It will go a lovely pink colour and is still good the next day.
Beetroot and brazilnut salad:
3 cooked beetroots, peeled.
Large handful of brazilnuts, roughly chopped.
Large handful of washed watercress or rocket
2tbsp Olive oil
1tbsp White wine vinegar
1tsp Mustard
Chop the beetroot and place in a bowl. Toast the brazilnuts until aromatic and add to the beetroot.
Mix the oil, vinegar and mustard and add a drop of water. Stir and add to the beetroot and nuts.
Add the watercress or rocket just before serving.May all your dots fall silently to the ground.0 -
To pickle beetroot, I heated the vinegars and sugar to a simmer before pouring on to the sliced beetroot in jars, it was delicious. I got the beets for free too:j0

I have already made pink coleslaw for my lunch, it was delish.
I'm gonna try making the Choc & Beetroot cake this evening. I should have some left and it's a toss up between the soup and pickle. I shall leave to ponder

About 6 weeks ago I pickled some beetroot in balsamic vinegar with a little honey (delicious). Now that it is finished can I use the vinegar to pickle some more beetroot?0

This is a New Zealand thing, very popular in the 70's and good as a side dish.
Sliced cooked beetroot - however much you have.
malt vinegar
Blackcurrant jelly
Put the sliced beetroot in a mould in layers. Make up the jelly with a quarter of the quantity of water given on the packet. When melted put into a cold jug and add a quarter of the amount of liquid of vinegar.
There is a total of only half the liquid given on the jelly packet used.
Pour over the beetroot and chill. It would be good with cold turkey.0
