Sorry if this has already been covered - I haven't had time to read through all the posts.
I was at my local farmers' market on Saturday and I bought beetroot to eat with that night's meal of roast chicken and roast veg. The farmer advised me to dice it and boil it (like a carrot or potato), then toss in raspberry vinegar. She said she had Czech workers on the farm at the moment and that's what they did.
It twas delicious!

I've been given four beetroot by a friend that gets an organic box, but isn't a fan.
What should I cook up with them? Apart from soup, i'm a little at a loss!0 -
I would cook them then puree them and make Chocolate Beetroot Cake.
The recipie is in the mega index. Try it, it really is very moist, chocolatey and yummy!!0 -

The recipie says to use a 7" cake tin. If you do it in 2 one pound loaf tins it works great, then you will have a cake each.0

my favorite thing to do with beetroot is simple but really scrummy- i just peel it and put in on some tim foild add a couple of garlic cloves, a couple of tablespoons of oil(olive or vegetable) and a couple of tablespoons of balsamic vinegar (i only buy the chep one in tesco's) , gather the foil up around it and roast in the oven fo about 1 hr (when you doing something else in the oven of course!) lovelyGrocery Challenge Feb 14 £500 / Spent £572.10!

Peel them and cut into chunks;boil like potatoes and serve with a savoury white sauce-so good!0
