  • Hi as another poster said its great with roast beef, sometimes i eat it whilst hot but other times i leave it to go cold and eat with salad etc, however keep it in the balsamic juices as the sort of caramelise and develope over a day or two.

  • You can eat the beetroot raw. Grate and mix with anything else you fancy for a coleslaw-type salad. I also juice them (hence the name!) along with carrot, celery and a little lemon juice for a really vitamin and mineral packed drink, great for detoxing too and makes 5-a-day a little easier to manage.

    I grew beetroot this year in a container and have just picked it - got about 8 beets and wondering whether anyone has a favourite or yummy way to cook it? I'd also be interested in any pickling/preserving suggestions.

    i remember my mum used to cook beetroot [not sure what she made think I've blanked that out] and it smelt mega minging so I've always been put off trying it until now though I do like beetroot.

    It makes a lovely soup. http://www.bbc.co.uk/food/ Do a search of this site for beetroot and you'll get loads of recipes. There's one from Hugh F-W, with feta cheese, that's nice.

  • I've been given a big bunch of the stuff. I've only ever liquidised it along with apple and carrot to make a nice juice but I've got too much of it to do this with all of it. How do I cook it and has anyone got any recipes please. I've had a look on the recipe thread but nothing jumped out at me. Thanks in advance :)
  • Hi there - A really lovely recipe for beetroot is to cook it and finely chop or grate. Add about the same amount of grated cheese. Then put in a dessert spoon of horseradish sauce and the same of mayonnaise. Mix it together and taste. Add horseradish or mayo to get it right.

    Beeetroot salad is easy and really delicious
    Just cook the beetroot until tender then skin and dice
    While the beetroot is cooking prepare the dressing
    Boil together equal quantities of vinegar, water and brown sugar until syrupy. Uncovered so that it reduces. This'll take about the same time as the beetroot
    Then just pour over the chopped beetroot while they are still hot. Allow to cool then chill. Best eaten next day.
    Oh, by the way, you can also cook the beetroot tops. They are a bit like spinach, but much tastier. Take the stalks out though, they are really tough.
