We've had beetroot in this week's veggie box, and I'm not sure what to do with them - any ideas? We've got a well stocked store cupboard, and loads of other veggies too, if that helps! :rolleyes:

Surprised you are getting beetroot now......mine has stopped, but was inundated with it over the winter!
Just beware that it does stain, so be careful - don't dice up on your worktop! Also when cooking, don't remove the whole root. I clean and boil or steam then peel afterwards. (Wouldn't advise steaming in electric steamer - think that it might get stained).
I pickled a few batches of it, as I am the one in the family who gets the jar out of the fridge, to find there is none there, just liquid! :rolleyes:
It is lovely just boiled, allow to cool, peel of skin and chill - seriously tasty.
I do a sort of coleslaw with beetroot - shredded cabbage, finely chopped onion, finely diced cooked beetroot (either boiled, or pickled), or raw grated beetroot and mayo. It is a funny pink colour, but is really tasty.
And a recipe for Beetroot Soup...........just googled for this one, so not tried it.
RECIPE INGREDIENTS
Ingredient Recipe Quantity
Beetroot 4 each medium - peeled & grated
Cabbage (Red) 1 cup shredded
Onions 1 each medium - chopped
Chives 1 sprig finely chopped
Apple (Granny Smith) 1 each peeled, cored and sliced
Oil (Olive) 2 teaspoon
Tomato Puree 2 tablespoon
White Wine 0.5 cup
Chicken Stock 4 cup
Yoghurt (low fat natural) 200 g
RECIPE STEPS
Heat oil in a large saucepan. Add onion and cook over a low heat for 4-5 minutes, stirring occasionally.
Add beetroot, apple, cabbage, stock and tomato puree, bring to the boil, cover and simmer for 10 minutes. Add wine. If serving hot, serve at once.If serving cold, allow to cool and then refrigerate for at least 2 hours.
To serve, ladle soup into four bowls and top each with a good dollop of natural yoghurt (if you don't have any yoghurt try using extra low fat Sour Cream). Swirl through with a fork and garnish with chives or parsley.0 -

I tried quite a few of the beetroot ones - as Anne-Marie says, I was swamped with the stuff over the winter :rolleyes:
The beetroot salad with walnuts and goats cheese was particularly delicious. I'd personally warn you off the beetroot salad with orange dressing - it sounds really nice but I found it sickly sweet.0 -

I like to cook beetroot (just wash it and take the tops off the leaves, don't cut into the flesh, or the colour will bleed out while they cook. You then find that the skin will just slip off when they're cooked and cooled) and then slice in a salad sandwich.
I once tried beetroot soup (from St. Delia), but it was 'orrible. Would love to try again, but need a tried and tested recipe.
Will try them roasted when mine are grown - thanks.

I was given half a dozen home grown little ones the other day.I looked up how to cook them and saw that roasting them was the preferred method, which i`ve now done.Is there any good recipes i can now use them for?
