Why don't you pickle them? Many recipes to be had for pickling - lovely to have a jar of homemade beetroot in a jar!0

With so many beetroot to use I would agree with TOBRUK and pickle some of them.
We have another thread on ideas for beetroot so I have merged your thread with it as it make it easier for everyone if all the replies are on the same thread.

I think it was mentioned earlier in the thread (but if not it's listed under Cakes in the Cooking section of the MEGA Index) but I can highly recommend the Chocolate Beetroot Cake.
And I don't like beetroot very much at all. i like the chocolate and beetroot muffin recipe best, although I cook the mixture in a swiss roll tin and not as indivivdual cakes. Everyone likes it.0
