    Thanks so much for the muffin recipe I tend to grow piles of beetroot as I adore it but trying to 'hide' stuff for the boys to eat is a nightmare this recipe is perfect thankyou so much!! :beer:

    I had an interesting meal out a couple of months ago when my boss took me out for lunch. It was beetroot pancakes with citrus winter vegetables tossed in creme fraiche. Absolutely delicious but the violent colour of the pancakes was a bit of a shock as had assumed that the beetroot would be on the side. :D

    I have 16 beetroots to use up pretty smartish. Any suggestions please?
    Can i cook it as a veg?

    I could only come up with borshch (although i don't have a recipe)

    It's nice grated as a vegetable with corned beef hash... if you ever eat corned beef hash...! Also beetroot crisps are REALLY nice. However, there's only so many of those you could eat, I guess. How about looking here ?
