Hate wearing gloves to work in but that would help if you can stand it.

Yes you do. A couple of years ago we got called to my boyf's grandad's cause he was convinced his time was up and he was going to die that night.
Turned out he'd eaten a whole jar of beetroot earlier and it had turned his wee pinky red! ;DWhen life hands you a lemon, make sure you ask for tequilla and salt0 -
will have to feed the kids loads, just to surprise them. ;D0

This thread has been extremely useful for me, thanks all who posted what to do with beetroots, as my garden is full of them!
Just a little suggestion: do not throw the leaves away, as the small ones are very nice raw in salads and the big ones chopped in minestrone soup make it very tasty and 'earthy' and give it a lovely colour.

For all I know, beetroot leaves are ok, I have eaten them always and they never did me any damage!
The leaves are quite rich in oxalic acid, which prevents iron from being absorbed - like spinach really, which used to be thought of as a very rich source of iron, but it cannot release it easily!
The best way to use them to maximise the nutrient value is to put them together with some food containing vitamin C, for example, leaf salad with lemon juice dressing, or chopped and cooked in soup mixed with broccoli and tomatoes etc....as vit C helps the iron to be released (don't ask me the chemistry of it please! I just know it as a nutritional fact).
Maybe also you were thinking of rhubarb leaves, which ARE toxic!
