    BargainAholic - made your Muffin recipe today and I agree, they are deeeeelish!! Bit on the rich side for my tastes (I'm not a sweet tooth) but my boys were very impressed and are taking them to school in their lunch tomorrow - they are taking extra's to share with their mates and will ask them to guess the *secret* ingredient :rotfl: Well, I doubt many will Q up if they think it has beetroot in there but I bet they'll scoff them merrily *beforehand* ;)

    Oh yes it is although I'm very fortunate as mine enjoy veggies anyway (it is their Dad who is a 'tinned peas and carrots only' person :wall: )

    If you want a chocolate and beetroot CAKE there's one listed under "Cakes" in the Cooking section of the MEGA Index and I can highly recommend it :)

    I can't wait to try this recipe - and I really shouldn't! (Not that's ever stopped me before)???
  • One of my veggie friends suggested washing the beetroot well (important), quartering them and roasting in the oven with some olive oil.

    We love them like that.

    Very similar to the one above (but I won't need muffin cases with the one in the index ;) )

    Cheers squeaky - I tend not to hunt down recipes but when something catches my eye in amongst posts/threads it can spur me on to try them :D

    Have to be careful what I eat these days so I don't go hunting incase I end up giving in to the demon temptation :rotfl: :o

    Many thanks Bargainaholic, thought you were taking the mickey a bit at first with choc and beetroot muffins, they are lovely, didnt tell OH what was in them and he said they were better than shop bought choc muffins!!

    As for recipes catching my eye - they're hard to miss while I'm indexing... which probably explains why my waistline reduction speed has slowed to a crawl.
