BargainAholic - made your Muffin recipe today and I agree, they are deeeeelish!! Bit on the rich side for my tastes (I'm not a sweet tooth) but my boys were very impressed and are taking them to school in their lunch tomorrow - they are taking extra's to share with their mates and will ask them to guess the *secret* ingredient :rotfl: Well, I doubt many will Q up if they think it has beetroot in there but I bet they'll scoff them merrily *beforehand*

Oh yes it is although I'm very fortunate as mine enjoy veggies anyway (it is their Dad who is a 'tinned peas and carrots only' person :wall: )~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~

One of my veggie friends suggested washing the beetroot well (important), quartering them and roasting in the oven with some olive oil.
We love them like that.

Cheers squeaky - I tend not to hunt down recipes but when something catches my eye in amongst posts/threads it can spur me on to try them
