    Some amazing recipes on this thread! I'd like to do the jellied one but will have to improvise with blackcurrant syrup and gelatin as I won't be able to get a ready packet of blackcurrant jelly. Love to try it though. The muffins are another fantastic idea.

    Has anyone mentioned the Georgian beetroot dip yet? Mash up roast beetroots with garlic, walnuts, salt & pepper. Add some fresh parsley if you have it. Delicious as a dip with pitta bread. You can use cooked beetroots instead of oven-roasted ones, but the flavour will be less intense.

    Seem to remember watching "Indian Food Made Easy" series on TV this summer and Anjum Anand visiting a top Indian restaurant where the chef made some samosas using beetroot, coconut and spices etc.

    After a quick Google search I found someone's suggestion for a similar recipe here:

    I have three beetoots in the fridge, the packaged ready to eat kind. I buy them because my toddler loves them but I don't like them much so I end up with more than I can use. Does anyone have any ideas of something I could make with them? I teried the love food ahet waste website, but no ideas for poor old beetroots. :confused:

    On Gordon Ramsays F word last night they made a beetroot salsa thing to go with HM burgers. It looked lovely, will try and find the recipe for you.
    When i typed beetroot into the F word website there was 3 pages of recipes! You should be able to find something useful in there.

    This is the recipe for the burgers and beetroot relish. You just blitz all the relish ingredients in a food processor. Looks lovely.

    I love them simply roasted (or remoska'd) drizzled with a bit of olive oil and thyme (or whatever you have), a few whole cloves of garlic in there, and a bit of black pepper. They are sweet and garlicky and lovely - you could always do this until they are not quite soft and freeze them, then roast from frozen when you want them.
    edit: sorry, meant to say peel and chop into chunks first!

    I have a glut of small beetroots but have no idea how to ccok them. Ilove cooked sliced (unpickled) beetroot on sandwiches but do no know how I should cook it. Any advice please?
