    Rinse them then bring to boil and simmer until tender - peel skin off and slice on to fresh new white bread with butter and they are gorgeous !!!!!!!!!!!!!!!!!!

    If you want a different way of eating them, you could always roast them with some other veggies too.

    I've got a bit of a beetroot glut at the moment too...my golden beetroot are just about ready and I'm on my second patch of the normal kind.

    I may even have to resort to pickling....but would welcome any other suggestions too because I'm starting to feel a bi uninspired by roasted or boiled beetroot!!

  • I had a major glut of these one year and had far too many pickled, before of course I discoverd they were so much nice unpickled. I cooked mine and threw the lot of them (2 carrier bags full) in the freezer. Someone suggested to try them with horseraddish sauce, unbeleivably good especially with roast beef etc.

    As Gordon (Ramsay) would say 'Cook - Slice - Freeze' (or leave the slice bit out if lazy!!) then have a bag full of them in the freezer 'Thaw - warm - horseraddish - serve' Delicious!!!

  • went to lottie yesterdya s its the only day it hasnt rained for about 4 weeks. only thing that was pickable were some small squash, loads of beetroot and runner beans.

    Now dont know why I planted beetroot as I dont really like it but somoene gave me the seeds!

    anyway did a bit og googling and last night made a beetroot curry! Tasted fine it was just the fact that my dinner was red!!!

    Am planning tonight to make some runner bean chutney which I found a recipie for online as there are only so many a person can eat!

    will let you know what colour it turns out!

    Runner bean chutney is really nice. I make it every year, and it especially nice with cheese. It will be a greenish colour, but the exact colour will depend on the type of vinegar you use - very pale if white vinegar, more of a khaki colour if the ordinary brown type.
