    Jamie Oliver has a recipe for beetroot cooked in the coals of a barbeque, which I tried and I LOVE! He puts some beets in a double layer of foil, with some rosemary, scrunches it up and stabs it a few times, then roasts it amongst the coals on a barbie. I've done it on ours which is Gas, so on the lava rocks....it tastes great, sort of concentrates the beetrootieness (is that a new word?) Once it's tender (and cooled down) you peel it. JO makes it into a salad with grilled steak and a cottage cheese dressing...I've just cooked it his way, and made dressed it with a french dressing. (the recipe is in Jamie at Home BTW)

    I'd have never thought to try to cook it this way as it can take ages to boil - he says to use small ones, but I've cooked them up to small tennis ball size this way!

    I usually just boil or steam them and use in salads. Years ago, we used to do the same, then grate them and make up a blackcurrant jelly including the grated beetroot and use a spoonful with cold meats or salads, and did the same with orange jelly and grated carrot. Colourful or what??????
    BTW, no idea what my toddler just did to put that in italics, and just made it normal again!

    I boil and once done, sit in cold water and peel once cold. Then chop, add cumin and mayo, mix up and add pepper/chili if you like it spicier and serve with salads.

  • I boil mine whole in the Pressure Cooker for 20 mins and leave it to depressurise naturally. Don't forget to leave the skins on and not to !!!!! them as they will "bleed" and lose their colour.
    Then just slice them either hot or cold. They go very well with stews and anything that can be served with cabbage.
  • I don't have the recipes but this issue of morrisons magazine has recipies for Beetroot Soup, Pickled Beetroot and Beetroot Chocolate Cake!

    I have 3 organic beetroot to use up ??
    Can i roast them in foil and how long for ,
    Any other ideas on what to do with them ??

    I've a lot of home grown beetroot to use up and wonder which is the best of cooking it to retain its flavour. Roasting is good but time consuming and high on energy. Previously I've cooked it both in a pressure cooker and in a microwave in water.
    Is there a way of cooking it in the microwave without water, to stop flavour & colour leaching out, and if so, how long would you recommend for a root about tennis ball size?
