Hi, I posted this on a previous thread about beetroot;
I like to roast them wrapped in tinfoil with some olive oil, garlic, chilli and thyme or to boil them up and when cooked stir them into a sauce made of garlic, ginger, chilli, cumin, coriander and cardamom fried then added to approx 1/4 pint of coconut milk and some lemon rind and juice. Simmer for a few minutes and serve with coriander leaf sprinkled on top. It's lovely!

Hi, you could slice some thinly and either fry or cook in the oven for beetroot crisps yummy, I also freeze plain sliced boiled beetroot packed tightly in plastic boxs.0

Beetroot chutney is lovely and keeps for ages:
1kg uncooked beetroot
500g onions
750g cooking apples
500g seedless raisins
3tbsps ground ginger
1kg granulated sugar
1 litre malt vinegar
Peel and grate beetroot, chop onions finely, and peel, core and chop apples.
Put all the ingredients in a pot, bring to the boil, and simmer until thick, then pot.
You could store unused beetroot in a wooden box filled with sand - they should keep for a few months like that so you don't have to race to eat them.
They'll also be OK staying in the ground for a good time after they are big enough to eat.
Boiled for 30-40 mins in the pressure cooker, you can freeze them as well, then defrost as you need for salads etc.0 -
I have got a lot of beetroot, and would like any suggestions of keeping it/ preserving it, without just pickling in vinegar.

Apart from pickling, I have frozen and made chutney from beetroot. I've also eaten beetroot crisps which were delicious but haven't made them myself. These threads may give you more ideas:

I cook it and slice it and then freeze it ready to use when we have salads etc. It defrosts really quickly0

We get a vegbox every week, been doing so for over a year and the scheme works well for us, we are eating more veg every week (so eating less expensive meat), and altho the veg isn't the cheapest, we are actually spending less than when we bought veg at the supermarket.
BUT, from time to time, our chosen box comes with beetroot in it, and I don't like beetroot. I could change to a different box, but if we like everything else in our usual box, then I would rather not change (sorry if that seems obtuse).
But there MUST be some recipes which use beetroot, but minimise it, or mix it with other flavours to help me grow to like it.
Can anyone help?I try not to get too stressed out on the forum. I won't argue, i'll just leave a thread if you don't like what I say.0 -
