My grandad has grown loads of them this summer, and has passed two carrier bags full on to me, apart from the chocolate cake recipe, (and pickling them)does any one have any other ideas for what to do with them??

Bake them with a little olive oil until they're soft.
Let them cool, then cut them up and make a green salad to put them in. Then crumble some good quality stilton.
It's lovely. You could also add some pine nuts or walnuts.0 -

Yup, you can do them like roast potatoes and they're pretty good like that too. They have a nice sweet taste like parsnips or turnips.
You can also deep fry them and make veggie crisps!!0 -

when pickling i cook them in micro first, then peel whilst still warm, is much easier.0

Cook them as normal to soften them then chop them up quite small.
Make a blackcurrent jelly (as normal) and put the beetroot in it before you put it in the fridge to set- I think you use the same quantity of beetroot as jelly, let it set.
Serve as a sort of beetroot salad. (you can use packet beetroot too)

Just peel them like you would spuds before you cook them.
