    Snap! But I'm the only one in the house that likes it, so I boil up a batch, cube it, put individual portions in small plastic pots and freeze it. When I want some, I just microwave until it's the temp I want! Nomnomnom :)

    You can store it in the fridge in a box without vinegar, but it will only last about a week. I sometimes buy fresh from the market and once it cooked up I usually do half and half as we cannot get through quite that much in a week.

  • Beetroot soup.

    Make it up with just the veggies and stock, freeze and then chuck the smetana/soured cream in when it's hot.

  • Cube up the beetroot, then make up a raspberry jelly with half a pint of vinegar instead of water (only use half a pint of liquid, not a pint like you normally would for a jelly) and pour over the beetroot(previously cooked) in a jar and leave it to set. Its very nice with cheese. Hope that helps Cheers Lyn.

    hi i need inspiration with my beetroot have soooooooo much what can i do with it all? i will be pickling some but have never cooked with it pls give me a few ideas many thanks:D

    Send some to me, I love it!

    Try beetroots grated raw in salads, mixed with grated carrot. There's a flexible recipe here: http://chocolateandzucchini.com/archives/2008/03/grated_carrots_and_beets.php

    Or wrap each beet in foil and shove them in the oven while you're baking something else. This steams the skins off so they peel easily, and you can then chop them and add them to all sorts of dishes.
