Apologies if thiis recipe has already been posted; I looked through the thread and couldn't find it.
I can't take credit for this recipe; it was in the Guardian a few years ago.
Beetroot and onion bake
Slice some onions and fry them lightly
slice the beetroot and layer in a dish with the onions.

My neighbour has given me some beetroot. He gives me some every year, and I've made chutney and pickled it before now. However we still have lots of chutney and pickles left, so is it possible to freeze them? If so would I freeze them before or after boiling?0

I cut it into wedges and roast it, just gently clean and cut into wedges put in a bowl and pour on some olive oil, just enough to coat it, add a dash of balsamic vinegar, salt and pepper and roast until soft usually takes about 30 mins.
If I have a lot I open freeze on trays and then bag up it can be put in the oven straight from the freezer and takes about 12 mins.1 Sealed Pot Challenge # 1480
