Keeping fresh beetroot?

Can anyone tell me how to store beetroot after it has been opened please?

It's the type that comes in a vac-packed wrapper - it's supposed to be better than beetroot in a jar (well it always tastes better to me!).

Each time I open it, it only lasts for about 2 days then goes off even in the fridge.

Any recommendations please? :)
The atmosphere is currently filled with hypocrisy so thick that it could be sliced, wrapped, and sold in supermarkets for a decent price and labeled, 'Wholegrain Left-Wing, Middle-Class, Politically-Correct Organic Hypocrisy'.

    Any salad stuff that I grow in the garden, when picked & washed then goes in a wee plastic bag, I then suck the air out, being careful obviiously, & then put in the fridge. I had some like that for 7 days, and still not spoilt. Worth trying.

    I suppose you could pickle it- after all it is cooked and then sealed and if you pickle it in vinegar it SHOULD be like boiling raw beetroot. but, I find that the vacuum packed beetroot, once the pack has been opened keeps better if you transfer it to a freezer bag and then use a wire tie to seal the pack. I find this helps it keep up to a week in the fridge. if you leave it in the pack and the air gets to it then it goes off (mouldy) in a couple of days!

    Course you can :T I would have mentioned that, but I got the impression from your OP that you wanted to keep the "fresh" taste :o

    I've just dug and cooked several of my HG beetroot. I've then peeled them. Some are sliced in the pantry in a jar of last year's shallot spiced pickle vinegar. The rest is in the freezer :) The batch in vinegar should keep for weeks, as long as the beetroot stays submerged.

    I did the same as you PP. You say they should keep for weeks.... is that all? Mine are in a jar covered with pickling vinegar, and I thought you are meant to leave them for ages before eating them. But if they don't stay long, should I just enjoy them now?

    They last for weeks, as I only make up as much as I need :)

    They're not like chutneys, where you need a flavour to "develop", so they don;t need storing - use them straight away.

    I've opened a vac pack of beetroot today and there is no way we're going to 'eat it within 3 days'. Any ideas on how I can store it??
