I decant it into an airtight container, and keep it in the fridge. It keeps for about a week, I find.Enjoying the power and freedom of letting things go.

You can also freeze it. Because you have to buy them in packs of 4 and there are only 2 of us, I usually use one, put one in the fridge to use a day or two later and freeze the other 2 individually and take them out the night before I want to use them.

I never thought of freezing them! I store mine in an old margerine tub so that the beetroot juice doesn't stain my proper plastic tubs. I tend to eat a whole pack in a week so this work for me

And me! I can eat a pack in one go! A lovely beetroot salad is:
A pack of beetroot cut into small cubes
1 or 2 grated carrots
1 small or half a large red onion finely diced
Mix all the above together with a dash of balsamic vinegar and a pinch of salt and leave for atleast an hour for the flavours to develop.0
