What to do with left over Xmas / Christmas Pudding?

I have a rather large, Tesco finest xmas pud lying around. It's been lying around for the last 2 years or so actually :blushing:
Question is, apart from heating it up and eating it (obviously) is there anything else I can do with it? It's use by date is then end of the month!!

Ooh Thanks for asking this question. I've got one too.
I'm sure i read somewhere about chopping up and mixing with icecream to make a frozen alternative to the traditional xmas pud, but not sure where i read it, or if i really did read it!

Make a sort of trifle out of it!! Chop up the Xmas pudding & put in a dish & dredge with tipple of choice, top with tinned morello cherries or brandy soaked apricots or similler (needs to be rich soft type fruit, sliced peaches just ain't gonna cut it!) then ice cream, add chocolate vermatelli (Sp?) if liked! Let the ice cream start to melt & go gooey before eating! I don't really like Xmas pud but it's delicious like this:heartpulsPost Natal Depression is the worst part of giving birth:p

I used to have a recipe for fruit cake fudge,which would work with crumbled Christmas pud too.
I can't remember the exact recipe,but basically it was fruit cake crumbled up and mixed with melted chocolate and golden syrup,left to set in the fridge,then cut into small squares.0 -

Once you've cooked it, try chucking it in the pan with your fried breakfast.
Trust me, it's lovely, and much nicer than frying in butter like some people do.

We love Christmas Pudding so much I boughy 2 dozen in the run up to Chrtsmas so we can eat it all year round.

Hello, does anyone have a recipe for leftover Christmas pudding-type ice cream or any other dessert that can be frozen? I do not have an ice cream maker and do not want to eat it yet as there is too much. The expiry date was 4 weeks ago but it is laced with booze so I am hoping it will be OK when I open it.
Any suggestions would be very welcome.
