What to do with left over Xmas / Christmas Pudding?

I make ice cream by hand, and use an old Delia cookbook recipe that is for blackberry Icecream I think, and whatever i am wanting to use up, i replace the blackberries with the same weight. So far rhubarb crumble and custard and also beetroot icecream have been great. Will look out the recipe and get back to you!

Sorry only just got time to search! This is the one I use and it comes out brill! I substitute the weight of the blackcurrants (and obv ignore the cooking instructions for them!), for whatever I have, ie. beetroot, rhubarb crumble and custard, and often make it up to the weight I have, like I had 2lb of beetroot so doubled it, it works for me and is so easy to do.

My family is not too keen on xmas pudding, it always ends up in the bin. But not this year. I made it into a loaf. It soon disappeared.
Ingredients
10 oz Self raising Flour
4 oz Butter
4oz Sugar
1 teaspoon Baking powder
3 Eggs
+ any leftover xmas pudding (broken up with a fork)
1 small cup of tea
Beat all the ingredients together. Grease a loaf tin and bake at 180 for about 40 min.
It was so good I'm now on the look out for reduced puddings. If anyone finds any can you let me know.
