I never peel beetroot before roasting it. I just wash it well, twist off the leaves and then wrap it loosely in a tinfoil parcel. Roast in oven (about an hour in a medium oven for the tennis ball sized ones) until a skewer or knife blade slips in easily. The skin will slip off easily in your hands...you can do this under a running tap if you want the beetroot cold.Val.0

Another non peeler here. Also, I drizzle honey over them halfway through roasting (and over any other veg being roasted) and sprinkle paprika, small touch of cinammon and nutmeg over all."Ignore the eejits...it saves your blood pressure and drives `em nuts!"0

I do what valk_scot does and roast them wrapped in foil. It steams the skins off. (If anyone has an OS tip to do this without using yards of tinfoil I'd be grateful to hear it!)0
