where do I want to go ?

Hi all,
looking for ideas please.
It's our 30th anniversary next February and I'm looking for somewhere to go to for a fortnight, the only thing that's grabbing me just now is a few days in Edinburgh.
we enjoy out doors stuff, not big drinkers and party goers, I really don't like the idea of a concrete jungle ( which doesn't make any sense with the only thing so far appealing to me being Edinburgh). We like going to museums, theatre, hill walking, eating out.
Previous holidays we've enjoyed are
Florida, Grand Canyon,( including Yosemite national park, John Muir woods.)
Thailand ( including Bangkok, Chaing Mai, Phuket)
The Gambia
Lake Garda and the Dolomites
North USA and Toronto.
city breaks weve enjoyed.
Krakow
Barcelona
I do fancy things like Kerela, Sri Lanka and the Maldives but I don't feel two weeks would be adequate, also Vietnam and Cambodia but again two weeks doesn't feel like enough time.
when we did Florida, Grandcanyon and Thailand we went for just shy of a month and felt that was just about the right amount of time, so we do plan on doing these places once we retire, but I'm loathed to go and do them then have to go back cause I missed somewhere.
I'm finding nothing is jumping out at me...
any ideas ?

thanks, we did think of walking holidays but thought maybe February wouldn't be ideal, we are also doing WHW in 4 weeks time as well, and next year the great canoe trail so was looking for something that yeah we can be active but that we don't have to be if we don't want to.
We also spent time last year walking in the Dolomites which we loved, but I don't fancy walking there in February and sadly never learned to ski0 -
Personally I'd go for a city break rather than a walking holiday at that time of the year then you'd have the option of museums and galleries, if wet, but could walk around on better days. There are heaps in Europe other than the couple you've mentioned so far.
Alternatively, if you want to push the boat out and have good weather in February you could go long haul. We had a brilliant trip to India in February and there were many in our group celebrating Big birthdays and anniversaries.0 -

that's kinda what is appealing to us the most ... Edinburgh for a city break, but I think I should look further afield than Edinburgh lol
were going to Prague in August, might have a think of other places to try.
we also did think of Kerela as we love cooking and the idea of a boat house sounded awesome, but I just don't think 2 weeks would be long enough tbh0 -
We went to Kerala for about a fortnight - brilliant, and February is a good month for India. Try Trailfinders (among others) to arrange a private tour.0

Had a read of the first few posts it does sound awesome thanks ... is 2 weeks long enough to do it all? will need to check weather flight length etc ... but it does sound like somewhere we would enjoy
edited to add : it's quite a long flight, possibly better for a 3-4 week break ?
incidentally just saw Kerela is as well so would need to take that into consideration as well0
