    Yes sunflower oil will be fine.

    As thriftlady says. Its any oil that has little or no taste.

  • I used to use rapeseed oil for muffins, frying etc., but it seems to have disappeared off the face of the earth :confused:

    Look at the ingredients of the generic 'vegetable oil' in your local shop - chances are, it's rapeseed.

    I'm sure - positive - that I'm not imaginging the bran muffins that my mum used to buy from Marks and Spencers when I was little. Dark muffins, with raisins in them and very tasty. I tried a recipe for bran muffins yesterday and they came out very bland and tasteless.

    Does anyone have a good recipe for them, and does anyone else actually remember the M&S ones??

    Hi I haven't made these (recipe from Muffins- fast and fantastic) but the recipes usually work well.

    225g plain flour
    5ml bicarb of soda
    2.5ml salt
    1 egg
    110-170g soft brown sugar
    15-30ml black treacle/molasses or honey
    75g natural wheat bran or 105g oat bran
    240ml cultured buttermilk
    45ml water*
    90ml vegetable oil or 85g melted butter
    85g sultanas, raisins or chopped dates

    Prepare the muffin tins. Preheat oven to 190-200C Gas 5-6.
    In a large bowl: sift together flour, bicarb and salt.
    In a medium sized bowl, beat egg with a fork. Stir in sugar, treacle/molasses/honey, bran, buttermilk, water and oil/butter.
    Pour all of the wet mixture into the dry. Stir until just combined, adding dried fruit during the last strokes. Batter will be lumpy but no dry flour should be visible.
    Spoon into tins. Bake 20-25 minutes, until tops spring back. Serve warm with or without butter.

    Note: When replacing buttermilk with either milk or water, omit bicarb of soda and use 15ml baking powder instead. You will probably not need the extra *3 tablespoons of water

    Cultured buttermilk is a low fat product that gives a special flavour and tenderness to baking.

    This is my Aunts recipe from Canada, I hope you like it :)


    Plain Flour - 1 cup
    Baking soda - 1 teaspoon
    Salt - 1/2 teaspoon
    Raisins - 3/4 cup
    Buttermilk - 1 cup
    Natural bran or bran buds type cereal - 1 cup
    Cooking oil (not olive oil) - 1/3 cup
    Molasses/Treacle - 3 tablespoons
    Large egg
    Brown sugar (packed) 1/4 cup
    Vanilla - 1/2 teaspoon

    Combine flour, baking powder, baking soda, salt and raisins in a large bowl.
    Stir together.
    Make a well in the centre.
    Stir in buttermilk.
    Leave to stand for 5 minutes.
    Combine remaining ingredients starting with the bran in the order listed in a separate bowl.
    Beat together with a spoon until well mixed.
    Add this to the large bowl, sritirring in enough to moisten the mix.

    DON'T OVER STIR, THE BATTER SHOULD BE LUMPY!

    Put in greased or lined muffin trays.
    Bake at 190oc for 20 - 25 minutes.

    Cool in tray for 5 minutes, then cool on a rack.

    Please can someone point me in the direction of the recipe

    i have also noticed there are other veggi muffin recipes around - cheese and spinich, courgette, etc. Is there one place where I can get all these recipes - they sound great for getting some extra veggies into our diet.
