    Fond this recipe on nigella.com , they have just come out the oven and taste gorgeous. All th ingredients were in grams so I had to do some conversions but will give u both.

    Syrup muffins
    8oz sr flour/250g
    3oz sugar/95g
    1 heaped tsp baking powder
    1tsp of vanilla essence
    3 tbsp of golden syrup
    1 egg
    2oz butter/65g
    5floz milk/160ml

    Basically mix the dry stuff together.
    melt the butter beat in the egg, then add milk, syrup & vanilla
    Add to the dry mix and lightly mix.
    put into muffin cases.
    (it also said to put spreadable golden syrup on top, then add another bob of mix, like a sandwich, but I didn't bother)
    Then put in the oven for 35 mins approx gas mark 3/160.

    I like it as it's quick and easy I have had to taste test of course:D
    Because when the kids get home from scholl I doubt there will be [STRIKE]many[/STRIKE] any left:rotfl:

    Thanks for this! I tested it out yesterday on some friends and they all loved them. I will be making several lots for the charity cake stall at the dog show next week (that someone else kindly volunteered me for :rolleyes: :rotfl: ). I think I will do blueberry and oat, raspberry and white chocolate, and lemon.


    greyhoundcrazy, can you tell me how much oil you used - the recipe says to mix the oil with the sugar and egg but the quantity isn't listed in the ingredients. can't find original post.:o


    **edit - aah, I found it - 2 oz olive oil - Twink had also asked :) **

    These are indeed lovely - made a batch yesterday. :T

    I only had 5oz of soft brown sugar left in cupboard so used that and they came out sweet enough for us. Also increased the amount of raspberries to a 175gm pack that was reduced in the supermarket and added a couple of drops of vanilla essence to use it up.

    I must admit I was a bit anxious as the mixture was really runny but as I said, there were lovely. :) (mind you, spent about an hour trying to fish out a stray seed from inbetween two teeth :D )

    Went to the local garden centre yesterday and to celebrate national beetroot day, the cafe waw selling lots of different items containing beetroot:- beetroot and goat's cheese scones, chocolate beetroot cake, juices, smoothies, relishes and................. beetroot and apple muffins.

    The chef was on a 'taster' stand in one of the halls but if pop in later in the week, I can get the recipe which I'll post.

    Made some amazing muffins last night, used the recipe in the latest tesco free magazine you can pick up in store. I didnt have all the correct ingrediants so heres my substituted version

    Cheese and corgette muffins.

    grated a whole courgette into a bowl
    along with some chunks of hard cheese that needed using up in the fridge, made a pile as large as the grated courgette.
    Added 1,1/4 cups SR flour.
    3/4 cups oats,
    tsp baking powder,
    tsp bic soda all mixed into one bowl.

    whisked 1 cup milk,
    1 egg,
    1tbsp dijon mustard
    5tbsp veg oil in a separate bowl.

    Add the milk mixture to the dry ingredients, spoon into a deep 6 muffin pan. Top with grated cheese and courgette. You can also top with sliced olive and roasted skinless red peppers (i had some jars in the fridge from lidl)
    Bake at 180c for 30 minutes.

    I took 1 if these into work today as last week i was too busy to eat lunch leaving my starving. Today i pinged in the microwave for 30secs and it was delicious and very filling. I was even asked if i had got it from tescos, :j everybody was very impressed they were homemade!

    Hi I haven't made these (recipe from Muffins- fast and fantastic) but the recipes usually work well.

    225g plain flour
    5ml bicarb of soda
    2.5ml salt
    1 egg
    110-170g soft brown sugar
    15-30ml black treacle/molasses or honey
    75g natural wheat bran or 105g oat bran
    240ml cultured buttermilk
    45ml water*
    90ml vegetable oil or 85g melted butter
    85g sultanas, raisins or chopped dates

    Prepare the muffin tins. Preheat oven to 190-200C Gas 5-6.
    In a large bowl: sift together flour, bicarb and salt.
    In a medium sized bowl, beat egg with a fork. Stir in sugar, treacle/molasses/honey, bran, buttermilk, water and oil/butter.
    Pour all of the wet mixture into the dry. Stir until just combined, adding dried fruit during the last strokes. Batter will be lumpy but no dry flour should be visible.
    Spoon into tins. Bake 20-25 minutes, until tops spring back. Serve warm with or without butter.

    Note: When replacing buttermilk with either milk or water, omit bicarb of soda and use 15ml baking powder instead. You will probably not need the extra *3 tablespoons of water

    Cultured buttermilk is a low fat product that gives a special flavour and tenderness to baking.

    Sorry to pull up an old thread - I found it when I put bran muffins into the search function.

    I've just tried the above recipe and the muffins are delicious :T

    Afternoon guys. Wo0ndered if someone could help. I have made some choccy muffins today- used basic muffin mix then added 6/80z of hot chocolate. Now I have just pulled them, out the oven and some- not all have slight dents in.:confused: How has this happened? Is it possible I didn't mix it thoroughly enough?:confused: made quite a fee batches of muffins now and this is the first time this has happend to me. TIA kal25:rolleyes:

    I suspect there may have been air bubbles in the mixture - that would explain why not all of them are effected.

    Coincidentally I'm just making some myself - well, the second batch are in the oven taking 5 minutes longer to cook than they ought to, as always! One batch of cranberry & mixed peel, one batch of chocolate chip made with bashed up choccy buttons - to take into work tomorrow. :D

    im not sure i this i ight, but this is he way i have been old to make muffin so always try to follow it.
    Add the liquids to the dry mixture and stir together with a fork. Do not mix to much, just until there are no dry bits!.
