Muffins ... there's a surprising amount of science involved. Unfortunately, I don't understand the science. I can't find my muffin book tonight (yes, in NZ, there are special muffin recipe books) but what I can say is that the less mixing the better. oh thriftlady, & here was me thinking I'd get by armed only with our favourite Susan Reimer book
if you recommend it it must be good, so that one's definitely going on my Xmas wish-list
Won't you ever learn:D I'm seriously thinking of putting thriftlady on ignore, there's not much thrift in keeping Amazon in serious profit all the time:rotfl: :rotfl: My DH blanches when I say * oooh thriftlady has recommended another book*;) (but to be fair, I've LOVED everything she recommends:o )You never get a second chance to make a first impression.0 -

By the way the author of the Mad About Muffins book also has one called Mad About Bread which has some fabulous ideas in it. I bought mine second hand fromAmazon Marketplace

Last year I had a recipe for Cranberry muffins which I can't find now......:rolleyes:
It was using fresh cranberries but I don't know what quantity of cranberries to put in the mixture. Does it matter too much? I was thinking if I over do it that it would make the mixture too runny with juice.

If you can't find a recipe for a cranberry muffin, look for one using blueberries. There will be hundreds of them, as they are the staple muffin variety in New Zealand and Australia. Good Afternoon all,
I have tried unsuccessfully to find a recipe for a healthy muffin that i can eat for breakfast. I am wanting to use wheatbran and dried fruit, dates, rasins and currants and possibly substitute the sugar with something else, but I just can't find a recipe :eek: It is driving me insane!!
Could someone on here please come to my aid????? I don't know where else to look!!

Here's a recipe you could eat at breakfast and you can maybe adapt to suit:-
150g wholemeal plain flour
1tbsp baking powder
75g light brown sugar
75g sunflower seeds
125g dried fruit of your choice
2 medium ripe bananas
1 large egg
4 tbsp sunflower oil
100 semi skimmed milk
Makes 8
200C/180Cfan/Gas 6
Preheat oven and place 8 muffin cases in tin.
Sift the flour and baking powder into a large bowl then add any bran that is left in the seive.
Stir in the sugar, sunflower seeds and dried fruit. Put the bananas in a bowl and mash with a fork. Stir into the flour mixture with the milk, egg and oil until just mixed. Don't overmix or the muffins will be tough.
Divide the mixture between the cases and bake for about 25 minutes. Cool on a wire rack.
Dates and ripe bananas bring their own sweetness of course so you could probably reduce the sugar if you want.:wave:0 -

Is it ok to use sunflower oil instead of Vegetable oil?, Also is there any alternatives i could use for oil in order to make a more healthier muffin?

Vegetable oil can mean any neutral tasting oil
I always use sunflower oil for my muffins.
