    I've just made some with chopped apricots, dates and almond - I took out 2tbsp flour and added ground almonds and a couple of drops of almond essence - gorgeous!!:T

    Slightly off topic... but don't you find Allrecipes.com annoying at times? Some of the recipes for muffins start off with using a packet of muffin mix or cake mix. When I'm baking I want to start from scratch, I don't want to use mixes. I was trying to find a basic sponge cake recipe in cups the other day and nearly all the recipes for cake started with a packet of cake mix. They often have recipes like this, using LOADS of condensed soups as sauces and

    Thanks so much for posting this recipe and all the ideas from people. Was having a horrible Sunday due to the weather and as soon as i saw your recipe i knew i had all the ingredients in my cupboard.

    I made my OH choc chip ones and myself mixed berry ones. Turned out great and now we have treats for our lunches for work without any ££ involved.

  • Does anyone have a recipe using grams ? Did use a gret one on here a while back but cant find it now [and OH has "cleared up" so cant find the exercise book i wrote it into....aarrgghh] Thanks in advance to anyone able to help.. choc muffins would be great.
  • Wow! Just went through this thread and made a muffin file for my recipe folder. So many tasty sounding ideas!!!!
    (my bathroom scales are definitely going to continue gathering dust under the sink........unless someone can convince me that all these muffins with oatmeal/yoghurt/fruit etc are extremely healthy!!)

    I found that too ;) not my idea of cooking at all.

    If you cut down the oil in them, reduce sugar content (or use some sweetner such as splenda in place) and increase fruit content and use some wholewheat flour that won't be as bad as some of the other cakes and stuff.

    has anyone managed to make any chocolate muffins that are REALLY dark? you know, like the ones you'd buy in Greggs or somewhere?

    i've tried putting melted plain choc and cocoa powder in them, but i can't get them that really rich looking dark brown :confused:

    Hi sorry I just spotted this....No I add the same quantity of flour and add the carrots as I would anything else like blueberries etc.

    why is it necessary to have lumps in the pre-cooked mix..i seen a couple of posts that have mentioned that this is an essential!..Just wondered what the lumps do, and, are they lumps of flour, or just air bubbles??
