    I'm addicted to muffins at the moment. My scales have broken and I am waiting for some to be delivered from Amazon, so at the moment all I have is American measuring cups, so its US style baking at the moment.

    I have a basic recipe of
    2 cups plain flour
    3/4 cup sugar
    1 tbsp baking powder
    1/2 tsp salt
    1 cup milk
    1 egg
    1/4 cup vegetable oil.

    I mix the dry ingredients, then mix the wet separately. I then mix the two with a fork- the key is to actually have some lumps. I bake them for about 15-20 minutes at 200'C. This makes about 12 muffins. Ina Garten (Barefoot Contessa) uses an ice cream scoop to put muffins in cases so that each one is the same size. I don't have a scoop though.

    I've made 4 different types so far
    1. With 2 tbsp cocoa and chopped plain chocolate
    2. with 2 tsp cinnamon and 1/2 cups raisins
    3. With a half white sugar and half brown sugar and a cup of frozen mixed berries
    4. Omitted the oil and used 1 tbsp of butter. Sauteed an onion in the butter and added this. I also used half plain flour and half cornmeal. I then stirred in about 1/4 lb grated cheddar, a chopped fresh chilli and a pinch of chilli flakes. I only used a couple of tbsp of sugar instead of a cup. I sprinkled some grated cheddar on top of the muffins before baking.

    They are a winner. We had them with roasted butternut squash soup today. It was a scrummy marriage!!

    Well thanks for reminding me about muffins - just made rasperry and vanilla ones and have cheesy ones in the oven now :rolleyes:

    I thought this was about bathroom scales, and I was going to offer this advice.......My scales aren't broken, but I have trained myself to ignore them:rotfl:.

    Joeyemma that is the same recipe I use except I use half a cup of sugar...and I don't include the egg...and I use more milk ('cos of the egg not being there)...and I use a third of a cup of oil/butter...and I always do a double batch...but apart from that it is the same recipe :D

    Muffins are really adaptable, I make them every week.
  • I use the same recipe but with no salt....

    The ones I make again and again are....

    Carrot and mixed seed
    raspberry and white chocolate
    Blueberry
    Cinnamon, date and walnut
    banana
    Mincemeat
    Cranberry and white chocolate
    Christmas pudding.

    Our fave is coconut, apricot and white chocolate, I also do:
    pumpkin
    banana and choc chip
    raspberry and peach (peach melba)
    blackberry and apple
    spiced apple
    pineapple and coconut
    jam
    bacon and cheese
    pizza

    ooh the possibilities are endless
