I know this is a bit geeky but does anyone have any recipes for muffins with bran in them? or maybe oats? I was thinking of a banana and bran sort of thing - trying to stay true to the diet! Hi Natty - I have the following recipie which was copied from another poster on here ( sorry can not remember who posted it )
All Bran Loaf or muffins ( either put it into a loaf tin or individual muffin cases )
1 cup All Bran
1 cup brown sugar
1 cup dried fruit ( i have used apricots and dates but sultanas or anything else works )
1 cup milk
I dont normally use a traditional cup - just a mug, as long as you use the same size mug/cup for all the measurements it still works.
Mix all of the above ingredients together in a bowl then cover and leave overnight. Next day add 1 cup of self raising flour and mix well. Pour into tin or muffin cases and bake at gas mark 4 ( or equivalent) sorry didnt make a note of how long to bake for but I think probaby 30 mins or less for muffins. The loaf turns out like a 'soreen' type loaf and the muffins are more filling and a bit heavier than normal muffins but are probably a bit better for you

pppppppppplllleeeeeeeeeeaaaaaaaaaaaaaaaassssssssssssssseeeeeeeeeee can I have the recipe in imperial measurments, I only work in lbs and ounces, my scales have weights, unless I can find metric weights cheap, I will continue to use lbs and ozs for now.................
9oz plain flour
3 tsps baking powder
half a teaspoon salt
4-6oz white sugar
1 egg
8 fl oz milk
3fl oz vegetable oil
YOU COULD ADD:-
3oz choc chips and 1 teaspoon vanilla essence or
3-4oz dried fruit, but increase liquid by 1-2 tablespoons or
1 teaspoon finely grated lemon rind0 -

this is one I pinched out of the Asda mag, they wholesome and tasty:-
150g wholemeal plain flour
1 tbspn (level) baking powder
75g light soft brwn sugar
75g sunflower seeds
125g Asda Berry dried fruit mix (I used raisins, cos I didn't have any!)
2 medium ripe bananas
1 large egg
4 tbspns sunflower oil
100ml milk
Preheat oven to 200C/Fan 180C Gas 6.
Line 8-9 holes of a muffin tin or put 8-9 double thickness cases on a baking tray.
Sift the flour, and baking powder into a large bowl then add any bran left in the sieve.
Stir in the sugar, sunflower seeds and berry mix. Put the bananas in a bowl and mash with a fork. Stir into the flour mixture with the egg, oil and milk until just mixed. Don't overmix or the muffins will be tough.
Divide the mixture between the cases and bake for about 25 mins.
Cool on a wire rack.0 -

Mmmm I made choc and cherry ones yesterday but my OH aint keen (doesn't like cocoa apparently) so it looks like I'll have to eat them all myself :j0

ooh, thanks for the recipes savingsara and oops-a-daisy - they both look really good. I'm working away at the minute but i can't wait to get back to my kitchen to try them out!
