    BASIC MUFFIN INGREDIENTS

    9oz plain flour
    3 tsps baking powder
    half a teaspoon salt
    4-6oz white sugar
    1 egg
    8 fl oz milk
    3fl oz vegetable oil

    YOU COULD ADD:-

3oz choc chips and 1 teaspoon vanilla essence or

3-4oz dried fruit, but increase liquid by 1-2 tablespoons or

1 teaspoon finely grated lemon rind

Thanks for this Sara! I don't do metric (it's my age!:o ) and these worked brilliantly! i added blueberries and topped with dem sugar and they are yummy!

I did cut the sugar down by half though! they still worked out ok.

    Hi catznine,
Yes it's a very forgiving recipe! I usually put a bit less sugar in than the recipe says too (and try to tell myself they'll be less fattening - my *increasing girth says otherwise  ).

*Maybe that's because I'm a feet n inches etc girl too, if ya know what I mean ;) !!!!

My first ever purchase off ebay was some fancy electronic kitchen scales which luckily do metric and imperial.

This may be a silly question, I love making muffins but have never thought of freezing them before. Do I just put them in the freezer and when I want one (ie in the lunchbox) just get it out of the freezer and let it defrost?

Also if anyone has any ideas for breakfast muffins I would love to hear them.
  • Samminich, I put them in lunchboxes straight from the freezer and they've defrosted by lunchtime.
I do make the lunches at 6 in the morning though!

Hi - I want to make some muffins as my tiddly peeps are not keen on toast anymore so could eat these instead for breakfast.

Anyone got any easy recipes ?

Savoury ones as well as sweet ?

    Thanks
