Mmmm.... I like the idea of cutting out the egg, as it reduces saturated fat (at least if you use semi skimmed milk as a replacement)
I have found that I could do with spraying my muffin cases with a little Fry Light (oil spray) as the muffins often stick.
More muffin ideas please! How do they rise using wholewheat flour?
Finally, the baking powder seems to activate as soon as I add the wet ingredients, as I notice the mix getting slightly foamy. I thought it was meant to be activated by the heat in the oven0 -

Just use the basic muffin mix and add crumbled Christmas pud (I always have one that I bought after Christmas the year before)You can either make it very fine crumbs but I prefer in quite chunky. A little goes a long way.0 -

I'm addicted to muffins at the moment.
I have a basic recipe of
2 cups plain flour
3/4 cup sugar
1 tbsp baking powder
1/2 tsp salt
1 cup milk
1 egg
1/4 cup vegetable oil.
I
I've made 4 different types so far
1. With 2 tbsp cocoa and chopped plain chocolate
2. with 2 tsp cinnamon and 1/2 cups raisins
3. With a half white sugar and half brown sugar and a cup of frozen mixed berries
4. Omitted the oil and used 1 tbsp of butter. Sauteed an onion in the butter and added this. I also used half plain flour and half cornmeal. I then stirred in about 1/4 lb grated cheddar, a chopped fresh chilli and a pinch of chilli flakes. I only used a couple of tbsp of sugar instead of a cup. I sprinkled some grated cheddar on top of the muffins before baking.

I've just made cheesy cayenne pepper ones..they are gorgeous.
I left out the egg and sugar completely, and added a bit extra milk instead. Added grated cheddar and good pinch of cayenne.

Drained tinned plums and dark chocolate (must eat while warm)
Drained tinned peaches or apricots, with a dollop of cream cheese (you half fill the muffin tin, then add the filling, and then put the rest of the mix in)
Lime marmalade (this is particularly nice)
Sultanas, grated apple & chopped walnuts

We still have some of the summerfruit berry muffins, so can't make another batch yet (plus OH as complaining I'm trying to turn him into a fatty- he does weigh 9st7!). The ones with cream cheese in sound scrummy!0 -

Muffins freeze really well-I just put them in a plastic bag. They defrost fairly quickly or 30 secs in a microwave. Great for lunchboxes.
I've just made my yogurt oatmeal version with coconut, cherries and choc chips.
I love the sound of the plum and chocolate, and the peach and cream cheese;)0 -

This website has loads of muffin recipes, uses cups for measuring too as it's american. The apple streusel ones are good, granny smith apples, and cinnamon/sugar topping, lovely.
