If it's not a letter before claim simply ignore it

Check out other threads posted in the last couple of days and you will see it is BW's latest strategy. It is still not a LBC/LOC though unless it offers 30 days and contains financial forms or links to them (do not fill them in) and contains proof of their claim.3

The letter mentions 20% discount if i pay before 16th May which makes it £128 - should i just pay this and get rid of it?? or is this something i can actually beat?haha, of course we beat these! NO-ONE is daft enough to pay that.
Why not just read other BW Legal threads.
If you gave a SA address for service in 2018, then do not reply to a letter that has randomly been sent to your 'old' (as far as they are concerned) UK address. If you got an actual court claim there that would be different but you only have the same tedious letter everyone gets:

Maybe get someone else in the household to email and require BW Legal to stop using that address, because they already know you are domiciled in SA, and that person should re-state the SA address.
BW are fishing for 'live' UK addresses and to avoid them using the UK address to issue a claim to you, I would suggest a reply from another adult at the property using the specific words:
You must immediately erase this address because it is not an address at which xxx xxxxx can be reached, and you already know their permanent domicile from 2018 is xxxxx xxxxxx xxxxxxx, SA.

Hi all,
I have now had yet another letter but this time it is a Claim form asking for £257 (25 court fee + 50 legal representatives costs plus the fine 180)
What do I do? It says it is from the County Court Business Centre and has a stamp type of thing that says 'The County Court'.
I have done all of the above suggested and they never replied to my original letter to them just sent me loads more. Do I need to just pay this amount to get rid of it? What if I ignore it? Will I be summoned to court? We have a baby on the way and really could do without paying this amount but could also do without the stress of these gastly letters that seem to haunt us!

It is not a fine and almost certainly conntains unlawful amounts, read this and complain to your MP.Excel v Wilkinson
At the Bradford County Court, District Judge Claire Jackson (now HHJ Jackson, a Specialist Civil Circuit Judge) decided to hear a 'test case' a few months ago, where £60 had been added to a parking charge despite Judges up and down the country repeatedly disallowing that sum and warning parking firms not to waste court time with such spurious claims. That case was Excel v Wilkinson: G4QZ465V, heard in July 2020 and leave to appeal was refused and that route was not pursued. The Judge concluded that such claims are proceedings with 'an improper collateral purpose'. This Judge - and others who have since copied her words and struck dozens of cases out in late 2020 and into 2021 - went into significant detail and concluded that parking operators (such as this Claimant) are seeking to circumvent CPR 27.14 as well as breaching the Consumer Rights Act 2015. DJ Hickinbottom has recently struck more cases out in that court area, stating: ''I find that striking out this claim is the only appropriate manner in which the disapproval of the court can be shown''.
