Hello, I need to get back on board with this thread....

I have a fridge full of fruit, veg, and salad to use up this week and I am here alone until Saturday so am planning to not shop at all and use some stuff up. OH, who was here last night, cooked an autumn vegetable casserole that did use a fair bit up and I have made a veggie curry today. It doesn't get the freezers emptied, but does use stuff up..

I confess, I have thrown away some cooked frozen chicken that has been hanging around a LONG time. I wouldn't trust it at all now so it's had to go. I don't eat much meat any more so I will know not to store it that way in future. I'm much more likely to eat it if it's been made into something, rather than just taken off the bird and slung in the freezer. we live and learn...

I do have a rather nice sea bass in the freezer that i'm looking forward to - I just have to learn how to cook it... :rotfl:

  • Sunday was H*iry B*kers Somerset Chicken decorated with slices of hg tomato with boiled potatoes, fresh carrots & fresh beans. Monday was the rest of the chicken with boiled potatoes (DSis), mashed sweet potato (DH & I), fresh carrots & garden peas.
The small amount of lo Somerset chicken & sweet potato has been used as a base for an hm soup - added various bits from the freezer - small pot of chopped mushrooms, half an onion sliced, small pot of lo cream sauce, several hg chillis + large handful of red lentils, 75g blue cheese & a chicken stockpot. Initial taste test & way too much chilli  so added half a pot of creme fraiche then zizzed & it was spot on :j DH & I had a bowlful each with hm croutons. Plenty left for the next 2 days lunches - at least :T

  • Beef Casserole was delicious (had to have a little taste :)) and I have two portions in the freezer and one for tonight's dinner, with mash and broccoli and stewed apples and custard for pudding.

Have to pop to the shop later to buy some nice ham for tomorrow's lunch as my friend is coming for a visit and I have not seen her since before the school holidays.I love Dobbies ham from their deli counter and although it's not cheap its worth it, as its carved off the bone while you wait , any left over bits will go into Fridays omelette :)

My neighbour gave me some rhubarb this morning so I will make a rhubarb crumble for tomorrow's pudding after lunch as I know my friend enjoys a HM crumble, I grate a little nutmeg into the rhubarb just to liven it up a bit.

I found some left over puff pastry in the freezer when I dug out the braising steak, so I have a fancy for some flaky cinnamon swirl buns as they are so easy to make and drizzle some icing over. I saw some in the supermarket the other day and they were 85p each !!!! yet they are cheap as chips to make with flakey pastry rolled out into a rectangle and a bit of cinnamon sprinkled on top and a few sultanas scattered around then roll up like a swiss roll and slice ,brush the top with beaten egg and cook until golden and dribble soft icing over each one. Delicious with a cuppa .My DGS love them when they come in from school.

Right off to Dobbies for my ham
    Have a great day chums

The slow cooker is having a rest today as it's quite mild out. Easy dinner tonight, breaded cod with oven chips and garden peas, fruit for afters if wanted. :)

Prompted by VJsmum trying to use up fridge contents, I'm on a similar mission to use up some stuff from the freezer, especially the bread-y things. Crumpets, croissants, pittas, finger rolls, flatbread, muffins, baguettes - you name it, I bet it's in there! Whilst they might be handy to have in, I need to empty the top drawer which is where all these things live so I can start planning for the C-season. ;)

Good idea about the cinnamon swirls JackieO; you're right, it's so much cheaper to do a DIY job if you can. Tomorrow I'm making a meat & potato pie to use up the last of Sunday's beef hotpot and will be using some ys puff pastry from the freezer and, as the oven will be on anyway, I might try a few swirls too. :D

I'm trying to do the freezer too, YorksLass, but the fridge is more urgent. Especially the fruit.

Tonight is the seabass with the end of a head of broccoli and some carrots and asparagus tips.

This morning I used up a banana on a sourdough pancake with yogurt and nuts. It was yummy

VJsmum: I think my problem with the freezer is a combination of ys stuff and hm ready meals, as in (for example): take out minced beef/make a batch of chilli/eat half/freeze half which takes up far more space than the minced beef did! :rotfl:

BTW, how was the sea bass?

Meat & potato pie made and served with the last of the swede from the fridge.

Cinnamon swirls also done (thanks for the idea JackieO) and they look good - haven't tasted them yet though. I softened a little bit of butter, added cinnamon, cocoa powder and icing sugar and spread it over the pastry before adding sultanas and rolling it up. I guess you could call these chocolate cinnamon swirls. ;)

Have also liberated some ys leeks from the fridge, half to make leek & potato soup and the other half sliced and frozen.

I need to do a meal plan tonight as next week is a "use what you've already got" week. :D

Meal plan is now done and, my word, this is going to be a very cheap week shopping-wise as everything is coming from stores. :) It currently looks like this (I say "currently" as sometimes it's prone to change!):

Sun: Chicken breast wrapped in bacon, stuffing, mash and sprouts
Mon: Salad, probably pilchard, mackerel or tuna
Tue: Liver, bacon & onion casserole, mash and broccoli
Wed: Poached cod fillet, mash and green beans with parsley sauce
Thur: Chicken curry, jacket potato plus whatever lo veg there is
Fri: Battered fish from fish shop and hm mushy peas
Puddings, if wanted, can be fruit & yogurt or just fruit. I could also knock up a milk pudding or a crumble with custard.

Plenty of choices for breakfasts and lunches too so I'll not be shopping at all this week. Not a problem as the weather is forecast to be dire and I have plenty to do inside anyway. :D

Well done YorksLass. Planning on using up lots of freezer food this month but will definitely need to visit the butcher for some more meat as don't have enough for the month. Need some sausages as we always have fry up with sausages at the weekend and don't usually have bacon as can't get any decent stuff locally!

Don't need any extra meat this week as using up what we have as well as some HM ready meals but will go and top up sausages and a friend has asked me to get a few bits of meat when I next go as she can't get there as doesn't drive (no bus from where we live).
