  • Yesterday I made a rice and lentil salad from a new-to-me recipe which calls for the rice and lentils to be cooked together with an onion, some carrot and celery. Then, it says, “discard the vegetables”.

    Well, I didn’t, I blended them with my stick blender and have four portions of useful soup in the freezer. The fifth one I’ve just had as a first course with my dinner. Yum!

    The actual r+l salad (which is completed with chopped onion, red peppers, carrots and celery) made 4 very generous portions and was very tasty.

  • Last night, I had rice that i had cooked 2 days before, 1 sad carrot, half onion and some decent mushrooms. I cooked the onioen together with the carrots and mushrooms. I mixed it all with the rice. Made mini balls, fried them. Tasted veeery good, like rice falafel 😂
  • Tuna and sweetcorn salad forme tonight as I want to use up the fresh stuff in the fridge before I go to Devon next week.

    Fruit is going down well with only a couple of bananas and half a box of grapes left

    Right must get a wriggle on as such a lot to do today

  • Have been using hm los from the freezer - Fish pie, steak & ale pie, chicken dish, spare ribs - only really enough of each for 2 people but have stretched to 3 by dint of lots of potatoes & vegetables. Also from the freezer - hm apple & blackberry crumble with custard. I am trying to empty the freezer in order to defrost ;)

  • Thanks for your replies. Thought I would update: I out the peeled pears in the slow cooker with 2 tsp of sugar dissolved in half a mug of warm eater. 5 hours on low and they are lovely - very tasty and sweet. I froze some in the syrup and others on a tray. The rest i am having with breakfast this week. I have a recipe for a chocolate cake sweetened with pears in juice so I might use it for that

    Using up LO mash & cabbage to make bubble and squeak for tonight's dinner. Will have with gammon steak from freezer, beans from cupboard and fried eggs.

  • Hopefully home back to Kent before its too late for shopping ,the journey down to Devon was a looong one. But I have enough in the cupboard to keep me going for a day or three at least :)

  • Monday made a bolognese sauce & had with fresh penne. Tuesday used the lo bolognese sauce & made a pasta bake topped with mozzarella. DSis had the lo pasta bake for dinner Wednesday.
    The good news is that I used lots of red lentils to pad out the mince, so still have half ,the mince in the freezer :D

    Yesterday I emptied one of the store cupboards to give it a clean and found a small box of organic chocolate granola that I got earlier in the year as a freebie with an online grocery delivery. We weren't overly keen on it so that's probably how it ended up at the back of the cupboard. Even though it was a freebie I didn't want to waste it, so I put my LFHW head on and have blitzed it up in the FP (the granola, not my head!). It's now in a lidded box and I'll use it up by adding it to flapjack/cookie/muffin mixture.

    Today's dinner is mustardy beef hotpot that I did in the SC yesterday, with mash and green veg. There'll be some left that can go in the freezer for another day; I'll add cooked diced potato to pad it out and use it as a pie filling. I have ys puff pastry in the freezer too for the top of the pie so a quick and easy meal on the cards. ;)

  • Got all my food shopping yesterday for around £23 odd.Lots of fruit and veg and a few essentials. Today I have my slow cooker on with some braising beef from my freezer along with some diced onions,carrots and mushroom stalks and a few diced green peppers.my kitchen smells delicious and once cooked will be portioned up for several meals. I also snaffled 4 cooking apples reduced to 70p which I cooked in honey and covered with thick custard.so several dinners and a good few puddings.
    Still using up stuff from the freezer :)
