    Yesterday, made celeriac soup (celeriacs from the garden). Also roasted a ys chicken and hD it with salad.
    Today, roasteda gammon and had with egg, chips and peas.
    Tomorrow we will have leftover gammon and chicken.

    Hubby and I had leftover chicken and gammon.
    I also had celeriac soup.

    Thanks to the activated charcoal I bought, I'm saving at least 8 2 litre bottles of sparkling water a week. I know it recycles - as long as you remember to take the label off, which annoys me - but it's better not to buy it in the first place, the less plastic used the better.

    This thread is very inspiring!

    I am not only trying not to waste any food, but also eating down the freezer and the pantry :)

    Last night I opened a tin of lychee (bbd 2016) for dessert, and we finished the tin today.

    Dinner last night and tonight was rice with chili sin carne, both from the freezer. I added some ecofriendly vegetable stock powder (bbd Mar 2017) tonight to give it a bit more taste.

  • Red chile enchiladas (I noticed a thread where it was being spelled chilli...we New Mexicans (USA) smile and shake our heads at this kind of misspelling:rotfl:)
    I boiled 10 dried red chile pods at a good simmer for 30 min and then blended it with a bit of the boiling water and alot of garlic cloves until smooth. Equal parts oil and flour like making a roux and when lightly changing color add the blended chile, Mexican oregano,garlic salt, salt and cumin to taste along with enough water to make a semi thickened sauce.
    Fry corn tortillas in oil until soft and drain. Layer sauce, corn tortilla, minced onion and shredded cheese then, repeat until you think that’s all you can eat. These are stacked enchiladas, not rolled.

    Refried beans. (Canned this time and a little water added then saut!ed in bacon grease)

    Guacamole from two really needing to be used avocados, seasonings and lemon juice.

    Spanish rice that was frozen from Christmas.
    Overprepare, then go with the flow.

  • Dinner tonight is sweet chilli chicken thighs and salad and a small jacket spud. Determined to empty this blooming freezer by Easter hopefully no shopping to buy now as I got the bits I had on my shopping list this morning Last day of the month tomorrow :) so I shall do a reconciliation of my accounts and I know I will have cash to pop into my holiday accounts
  • Last night I made some homemade fishcakes. I had a bowl of leftover mashed potato from the fish pie I made Sunday so added a tin of tuna and some tinned sweetcorn. Served it with some baked beans. They went down very well with my 2 boys. Me and hubby had the same but I made some homemade chips to go with as he has a big appetite!!

  • I made a really great tasting dump cake with SALE pears that were perfectly ripe, frozen blueberries and blackberries I unearthed from my freezer drawer dive this morning, a 2 year old cake mix, spices, butter and cream cheese.

    Dinner will be leftover clam chowder with saltine oyster crackers.
    Overprepare, then go with the flow.
