We are trying to recover money wise from me having a long period off work last year. I'm currently recovering from (quite mild) pneumonia so had time to make a bit of a plan for food while resting up.
I was brought up with money savy but slightly food hoader ways thanks to my dearest mum. Had a bit of adjustment period with my partner (who is the opposite!) to find a suitable middle ground. We have an upright fridge/freezer and a chest freezer so things rarely get wasted but do get frozen and forgotten about if you see what I mean. Cupboards and freezer could feed the 5000 so going to try and run those down, just buying veg, milk etc for a while.
Today I have used up a tin of sundried tomato/parmesan soup that had gone past its use by as a base for a sort of minestrone. Also used up some Italian sausage from the freezer as meatballs, and a big bunch of kale the neighbour kindly gave us - as well as some sad tomatoes and spinach from the fridge. Used last few roasted peppers and oil from jar to cook with. Quite pleased with my efforts and it will do work lunches for my partner.
For tea we are having curry using chicken tikka seasoning I found in the cupboard plus last of onions/peppers and some pakora/naan from freezer. And then we really need to pop out to top up the veg!
Gigantic post :rotfl: but I have to get it out somewhere!

Ladies, I also have access to as many carrot trimmings as I can carry ( peels, tops and tails and broken ones as well as parsnip) and cauliflower stalks
Some nice soup recipes wouldn't go amiss - Im sick of carrot and coriander0 -

I have to admit though I wouldn't want to be doing that every day, so I'd make the occasional HUGE batch and portion it up so I had a freezer full of soup.
You could roast the broken carrots to give the soup a different flavour.
Carrot and lentil
Carrot and ginger
Spicy or curried carrot
Carrot and parsnip (spicy/curried or just creamy)
Parsnip and potato
Carrot and sweet potato
Cauliflower and flageolet bean
Spicy cauliflower
Cauliflower and carrot
Cauliflower and parsnip
I make all of these... Not sure about the recipes, but if I've got them in the freezer, google probably has the answer

and if your feeling adventurous how about a carrot and orange cake,and if you have any some diced up redcurrants .I had an orange,chocolate and redcurrant piece of cake in JL a couple of weeks ago and it was gorgeous As I hadn't got any redcurrants I diced up some glace cherries from the cupboard, and chucked them in instead and made a nice change :)Washed the sugar off as much as possible first and patted them dry then chucked them in
turned out quite nice .
Parsnip and apple is one of my favourite soups and I throw some warm spices in as well ,paprika etc to give it a kick.
Cauli's I would perhaps steam and chuck some blue cheese in and whack some stock in and turn into a nice 'posh' soupas Delboy would say the worlds your lobster Rodney

I love mixing flavors together I had a lime and coconut marinated chicken breast yesterday and it was delicious with salad and a small jacket spud filled with two diced up mushrooms and a decent dollop of sweet chilli sauce .
Experimenting with using up my food cupboard stocks rather than going anywhere near the supermarket as much as I can this month0 -

Unfortunately I have just lost my job so will be using my own food hoard up! Have started with the ever so healthy :rotfl: cornedbeef, potato and onion pie with mushy peas for sunday dinner...all from the cupboard. Having said that, my Granda regularly bemoans the price of cornedbeef!0 -
Sorry to hear you have lost your job , and hope you will soon find another one.In the meantime using the food hoard is a good idea as learning to streeetch things out does help the cash flow considerably.
Healthy or not, food is food, and eating it up is far better than wasting it .Your Grandpa is right the cost of corned beef is making it no longer a cheap meal but learning to 'extend ' it a bit in a pie can make a tin go a good way
I used to make corned beef and potato pie a few years ago when I had a family living at home and it always went down a treat, I would often add a crumbled up Oxo cube in a little water to the filling for extra flavour.
I sometimes make it for my hollow legged grandsons as they will hover up anything edible They are like human locusts.
I also make corned beef pasties in the summer time to use with a salad.
I would not be too concerned about healthy at the moment, as going hungry is extremely unhealthy. The more you can get out of your food stocks the less worry being out of work is, and nonsense about 5/7/or 10 a day can wait until you have a healthier income.
Good luck with your job hunting and keep an eye on the forum for cheap inexpensive money saving recipes. I think everyone will be tightening their belts a bit in the coming months.

I'm sort of on your OH's side a bit, I can be particular about sausages. Having said that, I'd still eat a walls banger rather than throw it away!
I know what you're saying, and i'm particular myself. Except that I don't buy cheap sausages, they always have a high meat content. Favourites are Debbie and Andrew and the Black Farmer. It's just that these ones were Lincoln and he wanted Cumberland.
He is away at the moment, on a touring holiday in India with friends and I am trying to use the time to empty the freezer a bit. It isn't going well :rotfl: I was away myself for 5 days, then last night was DSs birthday so we went out. THe good thing is that I haven't done a big shop since before he went and don't plan to until the day he comes back (Sunday), though I have bought a few bits (bread, milk). Amazing how you can make do when you put your mind to it.
DD and I are having veggie risotto for tea tonight so I will buy a few bits to put in that. I don't think risotto with just onion and peas will be that enticing. ...:rotfl:I wanna be in the room where it happens0 -
VJsmum - if you've got a bit of chicken in the freezer you could defrost that and add that plus maybe some chorizo if you have it (I always keep some pieces in the freezer), alternatively some paprika for a bit of spice. It would save you going out shopping and make a nice risotto.

It's a good idea, thanks. I would if it were me and OH but DD is vegetarian.. She has a thing for pea and mint right now, so I've bought fresh mint... and will probably smother it in cheese...I wanna be in the room where it happens0 -
One of the chaps at quiz night last night gave me a large bunch of rhubarb so that's going to be stewed and topped with gloopy custard for this week's puddings for a few days I have the last of my celery cooking at the moment in my soup saucepan I added a couple of peeled spuds some lazy garlic and dried coriander and lots of black pepper and a handful of lentils so it will make about 5 portions of soup for this week's lunches and use up some odds and ends as well
no food bought so far this week, just over two weeks until we go away to the IoW for our caravan spring break so using as much as I can indoors ,plus of course eating down my freezer contents
