It's a good idea, thanks. I would if it were me and OH but DD is vegetarian.. She has a thing for pea and mint right now, so I've bought fresh mint... and will probably smother it in cheese...
Sorry to quote myself. The Asparagus, broccoli, pea and mint risotto was absolutely delish!!:T I cooked a portion for 3, but we ate it between the two of us...
OH is back on Sunday and I can't say I've made tons of progress on the freezerBut I haven't really shopped (a few bits, but that's all), and the fridge is looking a bit bare with nothing wasted.:T

Celery spicy soup was gorgeous and I have enough for tomorrows lunch left in the fridge .Chicken thighs done in a sweet chilli sauce for dinner tonight with salad and a small jacket spud.
The rhubarb was rather nice, and thick gloopy custard was pretty tasty as well and I shall use the last of that up tomorrow as well.
The freezer is getting a bit more wriggle room and using up my indoor stocks quite well also

Can anyone tell me what to do with a pork loin? I don’t want to bin it but I’m not porks biggest fan! Also hubby keen to eat it. I don’t know how to cook it or what to cook it with. Any help greatly appreciated x0

Can you slow cook it in a BBQ sauce and use to fill wraps or have with veg??
My kids are not pork fans and this is the only way they'd eat it!!
I used to do a dish with red wine where it was slow cooked on the hob but I haven't done it for years!0 -
I've used up some of the LO roast beef from Sunday plus all the LO veg which I fried up with some of the cooked chickpeas which I cooked this morning to make some hummus. We had this for lunch with some pickled onions, HM mustard pickle and HM red onion chutney.
Still have enough "bits" of roast beef left for another meal as well as about 250g which I have already minced and frozen and will be used as the base of a cottage pie with loads of added veg.
Haven't decided what to do with the bits but may make a biryani with it for tomorrow night's dinner.

Have added chicken stock & half a can of sweetcorn to a Small portion of lo Somerset chicken, heated up & zizzed to make a very tasty soup.
Have also been using bendy veg & los to make soups - adding the magic harissa paste for a zing - Thank you whoever it was that suggested it :T

I have recently found this thread and it really is what I need to keep me going on my new found love of zero waste food (as much as possible) !!
I have started meal planning based on what foods are in the freezer to begin with and fridge and store cupboard ingredients. Last week I managed to "shave" £20 off my shopping to put towards debt.
The process is new to me as I'm not sure what foods can be batched cook and what can be frozen (I've only just started freezing left over bolognaise)!! I have managed to make a version of egg muffin breakfasts but I didnt like them once microwaved (Ive never had a microwave before so still learning that)!
I have frozen left over breadcrumbs.
There are lots of ideas on this thread and I'm enjoying reading them and have subscribed.
I hate coming home from work and starting cooking (we all have different shifts) so any ideas for easy meals I can batch cook to freeze would be most appreciated?
