  • Afternoon chums ,finished the last of my carrot and celery soup for lunch today. I am at DD's for my evening meal tonight as her and her OH are up in London at the theatre watching School of Rock, so I am cooking the boys their meal ,at the moment diving into the chest freezer the boys said they want cornish pasty, chips and beans so a nice quick and easy meal for them, not sure what I will have just yet maybe a cheese omelette as I am not that hungry. I am out tomorrow night at a charity quiz where I get fed and on Saturday night I am at my sis-in-laws for dinner, and Sunday at DDs for dinner so apart from tonight I have very little cooking to do until Monday :)
    Last night's meal was sweet chilli chicken thighs and salad with fruit for pudding, a little bit more wriggle room in the freezer :)

    How do you do your sweet chilli chicken thighs? I've some in my outside freezer and I could do with some different ideas for them. I usually end up doing a curry or a tagging with them!

    The weather here today has been very spring-like and when I came out of the hairdressers I felt like a newly shorn lamb! :D As I have to pass our local Co-op on the way home I called in to see if they had any ys stuff and came out with a pack of hot X buns (we've already had one each ;) ), some mozarella (now in freezer) and a pack of crumpets, also in the freezer (not ys but on promo). So, a couple of bits "in" but nothing "out". Oh well, can't win 'em all!

    Market day tomorrow but I think it will be for just top-up F&V so it looks like being a very cheap week. :):)

    I am interested too, I feed my dog chicken thighs so regard them as hers.
    Do I need it or just want it.
  • I douse in sweet chilli sauce ,wrap in foil and chuck into my remoska 20-25 minutes all done and delicious, I prefer these to chicken breasts as good value for money. I am very much a spicy eater and to me will happily use sweet chilli sauce on almost anything

    I have also at times got a small polythene bag and put a good desert spoon of a mix of paprika, and mixed herbs in it and coated chicken thighs in the mix, then wrapped a slice of bacon round them and put into a pyrex dish and into the oven covered with a bit of foil and roasted for 20+ minutes, then remove foil for the last 5-10 minutes to brown off
    always stick a skewer in to make sure the juices are clear.

    You can but chicken thighs in Aldis already covered in chilli sauce for about £3.00 for 6 and they are a good standby in the freezer. Usually pretty big ones, nicer to me than legs and with a good amount of meat on them

    Just had a jacket spud and salad for lunch as I am out tonight at a charity quiz night in Chatham for the KM newspaper and there is normally pretty good food etc on the tables We usually take a little something along as well with us and as there are 8 of us we get a good mix of nibbles etc to keep us going :)

    Thanks Jackie. Will definitely be trying them. Have just bought a Remoska so will try that out at the same time. Do you use the trivet or just put them in the pan?

  • I usually wrap the chicken in foil and chuck it in (saves washing up ) or use a small pyrex dish and cover that with foil so no splashes then I can pop a small jacket half cooked spud by the side and they both cook together :)

    I have a couple of epic fails to report... :o

    Some manky salad... chucked
    SOme overripe bananas … chucked. There is only so many bananas one needs in the freezer 'in case' you want to make banana bread and I already have a lot. And I haven't made the banana bread..

    Ok - I guess not that epic but I can do better.

    Used up the last of a cabbage and half a celeriac for dinner tonight. Just have half a swede and a few carrots to finish off before shopping again on Thursday. Will probably make some carrot & coriander soup with the carrots as they're getting a bit bendy now!

  • when I make carrot and coriander soup I dollop a good slug of sweet chilli sauce in as well and a hefty slug of garlic puree :)
