    I decided to ring the changes today with the veg for my roast pork dinner and take the opportunity to use up the odds and ends in the fridge, I live alone but like to keep a good selection of fresh vegetables in and root vegetables have a good live span.

    I made a root veg mash from swede, carrot, turnip, parsnip and celeriac and plenty of black pepper. Using some lurking lettuce and spring onions I made braised peas and lettuce. And finally to use some bendy celery I oven braised it with stock, onion, garlic and thyme, I took a small portion of celery to eat with my dinner the rest I blended to make soup which I'll have for lunch Tuesday.

    There's enough LOs to have another roast dinner tomorrow :D

    Yesterday's roast chicken dinner was very tasty and I used my new air fryer to make roast potatoes. Definitely a success and ridiculously easy. :)

    Pudding was the last bit of strawberry ice cream from the freezer, melted and mixed with some plain yogurt and defrosted mixed summer berries folded through. Enough for 2 puddings. :)

    Today I've stripped the chicken and have enough nice slices for a chicken salad and also chunks for a chicken & mushroom pasta bake. The carcass has been boiled for stock that will be turned into 4 portions of chicken noodle soup.

    Today we're having liver, bacon & onion casserole. I've made a double quantity so that's half for tonight with mash and spring greens, and the other half will be frozen for a hm ready meal.

    Operation "Freezer Odds & Ends" underway:
    Strawberry ice cream
    Mixed summer berries
    Bacon bits from a pack of cooking bacon
    Two tomato puree cubes (added to casserole)

    I’m working on clearing out my fridge freezer. Interesting finds going on as I make my way through the bits of this and that I’ve saved. I had frozen the watery juice from a can of mushrooms and used it in minestrone.
    Frozen egg whites, saved from making carbonara with the yolks, went into eggs scrambled with cheese and Mexican chorizo this morning. I made so much, I had to share a few bites with Gypsy dog.
    Overprepare, then go with the flow.

    Making it my mission to have one thing from the cupboards and one thing from the freezer every day, even if it's just a portion of veg or a herbal tea bag..

    Yorks lass, I had a smoothie for my lunch yesterday with some frozen smoothie mix DD bought ages ago and hasn't opened.

    I confess I threw a way a box of green tea bags yesterday. They were out of date and unopened. I don't like green tea, and I think DD, who does, has moved on to other things...

    VJsmum: Ooo, smoothie - you've given me an idea for 2 frozen bananas that are lurking in the freezer. :T

    Used the chicken stock today for soup (it turned out as chicken & veg rather than noodle); there must have been more than I thought as I've got 6 portions, not 4. :D

    Today's evictions from the freezer were 2 ys wholemeal muffins, split and toasted, with poached egg on one half and beans on the other for brekkie. Two ys squares of balsamic red onion & cheese foccacia also getting the heave-ho to use with tonight's chicken & mushroom pasta to mop up the sauce.

    However, not all success though, as a green pepper has been chopped and frozen (still, no waste) and I found some minced garlic in there too. Don't even remember that going in! :D

    I'm definitely on a roll with the freezer turf-outs! :):)

    This morning it was 2 ys potato cakes that we had with bacon, tomatoes and a few lo baked beans for breakfast.

    Lunchtime saw the demise of crumpets, topped with cheese.

    Tonight we're having chicken salad and I've dragged out x4 potato croquettes to add as a "side" so that's another bag emptied.

    So far it's all been little bits & bobs (most of them bought ys) so not a lot of room created, but at least it's getting easier to find things! ;)

  • I found frozen biscuits (American) with some chunks of ice on them at the bottom of the freezer drawer.
    I rinsed them:eek: and baked them in a hot preheated over. They turned out just fine.:T

    Hello folks! I carry a ziplock plastic bag everywhere these days. Yesterday I shocked colleagues in London by taking leftover 'free' sandwiches after the meeting buffet! There's lunch today sorted.
    Also I shocked the buffet carriage staff on LNER by asking for a water refill. They did it but looked incredulous...

    My husband did this at work a couple of weeks ago and was tucking into one of them when he found a nice long hair :eek:so be careful :rotfl: made my feel ill when he told me.
    As a valentines treat I've made DH some homemade fudge with a tin of condensed milk I found in the cupboard. It's about 3 year out of date but he'll never know ;) it's come out quite crumbly but I will keep the crumbs in a tub and they can be used on top of ice cream.
