I missed breakfast this morning as I overslept a little then had to rush out to the junior park run :)
lunch was a mushroom and marscapone omelette
dinner will be leftover quinoa bolognese with black spaghetti

I had half a cabbage that needed using so I've also made a cabbage and chickpea korma which will be enough for 2 days lunches :D

  • Scotch eggs are done - i did 3. It was bloomin hard work. They turned out ok-ish, but a little bit plain and lacking flavour, i've eaten one with some pickle and sauce. If i try them again - next time i'll get some better sausages (or minced pork) and add some more sage and onion stuffing or other herbs - i added a little bit but it's hardly noticeable.
Also had to brush them with some sunflower oil as the breadcrumbs were really dry. Using breadcrumbs made from dryng out some plain white bread probably hadnt helped - could have spiced that up a bit too.
I baked them, i'm not keen on deep frying. I think they're probably something to go in the "tried it - too much effort for too little reward" pile. Easier and cheaper just to buy a pack from T....

This is the thing.... for these you might as well pick up a pack of two for about 70p when you see/fancy them.... making your own two would cost about 30p each anyway.

Nice to do you own, if you CBA and have everything to hand and like the faff.... else just buy a pack :) It's not just an egg, sausage and few breadcrumbs is it.... there's the seasoning, the waiting, the muck to clear up, the washing up to do .... buy :)

I prefer making my own scotch eggs I do cheat and buy sausages usually when I can buy some good ones YS the last ones were pork and leek. I no longer bake them but use my airfryer. Limited mess as well, small pan to boil eggs and dish to put breadcrumbs in :). Even with more complex cooking I wash up as I go so I'm not usually left with a mess :)

Today was a pottering day at home, which has gone too fast :( lunch was a mushroom omelette, dinner was meatball in tomato sauce and pasta. Due to a slight incident with a new pack of pasta, half a 500g pack ended in the water  so enough for three portions with the meatballs (1 in the freezer and 1 for lunch tomorrow) just need to work out what to do with the rest  the rest of the pork mince will need cooking tomorrow as well

    *sniggers* :)

I always pour it into a dish/mug first... so I can see how much I'm going to use + I'd fear steam getting into the bag and making the remaining dry stuff strangely sticky.

I remembered once it was too late that I usually pour into a mug first for the same reason :rotfl: typically I couldn't have had my blond moment with a nearly empty pack

I ate something that didn't agree with me. Following my dietary scoffs you'd not think that possible ...

I think it was the whole pack of special dark chocolate/cherry knobbly biscuits I ate.... as I started to feel a little out of sorts soon after. I had heartburn all evening and it kept me up through the night. I had a coffee about midnight and could barely swallow the hot coffee as I could "feel" it struggling to nudge past the entrance to my stomach.

I had an uncomfortable night. I woke several times in the night. I felt groggy this morning and had a belly on me like I was 4-5 months pregnant.

.... I think .... it's now turned into wind and will soon pass :)

I think my days of free range chocolate eating are over ....
  • My heartburn/indigestion type remedy, if I need one, is:

half a mug of tepid water, good squeeze of lemon juice, level teaspoon of sugar. Last of all - add a heaped teaspoon of bicarbonate of soda. It will start to fizz at that point. Drink it down quick and wait...

The "gas" from it tends to come out the mouth end pretty quickly and that usually does the trick in my experience.
  • I've had Whole Earth peanut butter on wholemeal toast and a cup of tea.:)

I was listening to a podcast about female hormone health last night and she was saying it was extremely important for women that you have healthy fats to keep your hormones balanced.
