Took a while for the cloud to burn off this morning but then it turned into another lovely day, I am so up to date with washing with all the line drying opportunities and I have had to water the pots this evening 🙃
Swimming and grocery shopping this morning, also done some ironing and life admin but not really sure where the day went.
Sausage and spinach gnocchi for lunch as I was out late afternoon/early evening at the cinema. Glass of wine and some houmous and cucumber when I got in, had a chocolate brownie LO from volunteering with a cuppa too 😋

another lovely day 🌞😎 I took my cardi out and about this morning but didn't need to wear it.
My sister went out to the garden centre at 10am chosen for its cakes rather than its plants 😁 we had tea and cake before she got the small apple tree my nephew wanted which was on offer.
Lunch was said slice of cake 🫣
Visit to see EF after lunch, the lift in the care home has been out of commission a week now so a lot was said about that, and she had chuher mind again what she wanted, I've stopped responding to the changes she keeps making until the LA have allocated a 'broker' to discuss next steps, although she is back to agreeing going home isn't a option, well at least for this week. The delays haven't helped.
I made a large rainbow slaw for dinner (red cabbage, yellow pepper, carrot, celery, cucumber, SS peas, spring onions, green apple and broccoli stalk) with a peanut butter dressing rather than mayo. I poached some chicken to go with it. LOs because I can't make small salads

I had a banana and a yoghurt and a cup of green tea. It looks like a nice week weather wise. My friend can't meet me today but I still have to go out for a class this morning. I will walk there and back.

I haven't done a meatloaf for a long time either, Nor me, but given the price of mince, like tinned corned beef, no longer a cheap option
Just made a crumble, using frozen 2024 own grown stewed apple & blackberries. my apples & berries are full of blossom this year so if it all works I'm going to need the freezer space come Autumn

Good morning everyone,
I can report back that the chicken mince pizza crust was delicious. I halved the recipe and it was plenty for two portions with salad. Yes beef mince is so expensive just now, unless it's for savoury mince I tend to use a mix of pork and beef. The last meatloaf I made was with turkey mince and streaky bacon and that worked really well.
I had a lovely day with family yesterday and didn't get a chance to post. Unfortunately little DGD was a bit out of sorts. Her Dad was an early teether and I'm not sure if she is heading the same way. We made a good dent in what seemed like a massive amount of food so while there's LOs there's not as much as I thought there would be. The salads we'll use up for lunch time and I'll freeze some of the ham and the ham stock. Tonight I'm making a version of this Leftover Korean rice bowl | Tesco Real Food . I've physio at lunchtime and we are pooch sitting Ari & Frank so their antics will keep me on my toes.

I think my last meatloaf was also a turkey one possibly from the pioneer woman blog/website although I missed out the sweet sticky glaze that the american’s tend to put on their meatloaf, way too sweet for my taste.

I have some leftover mashed potato to use up and had a small piece of cooked salmon in the freezer so it’s fishcakes tonight, I’ll add some capers and dill to jazz them up a bit. To go with them there's plenty of veg to choose from it might be cauli or ts broccoli depending on which one looks like it's starting to change colour 😉

Work provided lunch today, bit carb heavy but yummy sandwiches. Was a quick turnaround as out tonight so prawn and broccoli Thai red curry with noodles for a quick tea.

It was really warm on the walks yesterday. I did over 18,000 steps. I was so tired I got into bed at 9.
I have had some baby watermelon and I'm going to take a protein bar with me today. My class got cancelled as the tutor was ill so I booked another class instead. It feels much cooler today.

Typed post and forgot to hit post last night!
My garden bin had dropped enough for a bit more Brambling removal and I could top it up before it got too warm
I dropped a bag of EFs cookery books at a charity warehouse, I meant to go into Brewers next door for colour sample pot but was at Sains before I remembered that! I did pick up some fresh F&V in Sainsbury's and used my nectar prices to pick up 2kg of chicken thighs for £4.60 they are waiting to be skinned and boned before freezing.
Slaw salad with chicken for lunch (still LOs) Marinated and sliced a pork loin chop for dinner in five spice and quickly stir fried it, I stir fried some cavolo Nero with garlic and ginger finished with soy and oyster sauces.
