I was looking what needs using up from my fridge. I am marinating some tofu in soya sauce, hot sauce and maple syrup for dinner tonight and probably might make air fried potatoes to go with it as I have four spuds left. I will make a salad too with what is left.

I have half a jar of sun dried tomatoes in oil so I might whizz them up to make a soup later with some passata and veg bouillon.

  • Been a lovely sunny but breezy day here - 3 loads line dried 😀

I’ve stripped and remade the bed, dusted the bedroom, been for a swim, made soup for work lunches, tidied and pottered.

Scrambled eggs and mushrooms on toast for lunch. Chinese chicken traybake with vegetable noodles tonight 😋

Dry here as well although my bedding didn't dry on the line, I won a argument with his lordship to get it off the bed 🙄

other than the washing a lazy day for me.  I was going to cook a roast but CBA it will be ok tomorrow

sausage sandwich for lunch using some YS sausages from the freezer.  LO pilaf with some chicken for dinner.  My fridge is currently a LO free zone, at least until I cook a half leg of lamb tomorrow 🤷‍♀️

    Good morning everyone,
After a lovely, sunny day yesterday it's foul today, tipping it down, gloomy and very chilly. No excuse really not to tackle the voluntary admin due this week.
HM soup from the freezer and trying another recipe from my new cook book - halloumi and tomato pasta Meliz Berg One-pot Halloumi & Tomato Pasta Recipe | Quick & Easy Meal (thehappyfoodie.co.uk)

I had the other half of the block of tofu and make a tofu scramble and had it with toast.

My cat had a seizure last night so my husband took her to the vet this morning. She had blood taken and her heart checked etc... Over £500 gone. I am going to try and claim some of it back from Pet Plan now. I will know more when the tests come back.

Two of my other pets I used to have had seizures, but I can't remember what the cause was for either of them.

Dull, dry & a bitterly cold wind, not a day for pottering around
Early doors to Marks, still have their large nice caulis, so one of them is for dinner tomorrow, also YS very posh, eye watering price sirloin steak for tonight

Lunch was clear out, a couple of fish fingers with a fresh tomato
Dinner, the YS posh sirloin, with fried eggs, AF oven chips & YS mushrooms

  • For once, the weather was nicer at the weekend than a work day, was in the office today so not too bothered about all the rain this morning 🙃

Strangely quiet and productive…must be the Easter wind down starting.

Portion of celery and Stilton soup for lunch, with the end of a granary loaf I found in the freezer. Made tenderstem broccoli and anchovy pasta tonight 😋

Dry here but definitely a little chilly again, I reluctantly took my arm out of bed to turn off the alarm ⏰

work was at a nice steady pace, just the boss and me working so I got more done than I usually do when trying to train as well.  I'm only working three days this week so just two more to go  🙂 and two months until retirement 💃  not that I'm counting 🤫

I lied yesterday when I said there were no LOs in the fridge I forgot I cooked extra sausages for another sausage sandwich for lunch today.  I steam roasted my half leg of lamb in the ninja for dinner with rosemary and garlic in the water in the bottom of the pot, the lamb, potatoes and parsnips in the basket 😋 just 35 minutes once it reached steam and then airfried for 10 minutes. It turned out really tender and veggies crisped whilst meat rested.  I cooked runner beans, purple sprouting and cavolo nero to go with it.  Plenty of LOs

Weather undecided, cold, and some sun

Made last minute additions & changed to Asda order, some 15p Easter reduced price veggies added, but the green beans are OOS already so none of those for me.
Lemons still on offer, just as well because the lime curd I made has nearly gone. :)

Lunch, a tin of soup for convenience
Dinner, yesterday's cauliflower as cauliflower cheese, with use up pointy cabbage, boiled & well buttered.
I'll have freezer rootle to see if anything suitable to add, but may just pop some frozen bangers in the oven along with the cauliflower cheese.
