    Can you freeze it Caronc? It looks very vibrant 

    Busy work day and I need to have a conversation with my manager on Tuesday about my colleague's worrying lack of basic knowledge after nearly 6 months in the job not one I'm looking forward to but it was requested and all I will be doing is confirming what he said last week. It won't be my problem for much longer but my leaving is why he is worried 😟 

    I was stressed by lunchtime when it took us three times as long to do a task than it should have  :# I wanted to bake but the waste line said no so made a big batch of vegetable soup in the ninja, carefully dicing the veg which I find relaxing 😎 and I also made a large lentil and carrot salad.  I will need to freeze some of the soup as I got carried away. I was on my own this after so more work got completed as I caught up

    lunch was a portion of the lentil salad with feta cheese.  JO sweet n sour pork with peaches, rice ans stirfry veg

    Started with sunshine & blue sky, now clouding over, shame I was hoping for a potter in the garden late.

    Early start, made yet another banana loaf. I'm hoping to have ago at lime curd later, in the Asda ninja style pot. I suppose lime curd spread on banana cake is two of my five a day?

    Yesterday's chicken in SC turned out well, fell to bits as expected, but made picking bits off easy. I used some in a Coronation chicken last night, with LOs.

    Lunch, LO Coronation chicken & lettuce sarnie
    Dinner, Some chicken breast, boiled new spuds, Spring cabbage & carrots

    Eight out of ten owners who expressed a preference said their cats preferred other peoples gardens

    It is lovely and sunny here today.

    I had a vegan bacon sandwich on a toasted muffin with ketchup for breakfast. :p

    I made a really nice salad yesterday so I am going to make that for lunch. I am going to pickle all my red onions first. I think I have a spare glass jar downstairs. They are nice to top salads and curries with. I might roast a can of chickpeas too in the AF as I haven't made them in ages. I might make a potato salad too as I saw I have a tin of new potatoes in the cupboard.

    Good morning everyone, 
    Apparently it freezes really well Brambling. I only made a small batch to see how it worked so after I've used some tonight there won't be masses left. I plan to freeze in tablespoons as the various recipes I fancy trying seem to use 1 or 2. 
    Have you tried AF roasted tinned potatoes Wednesday, they are meant to be very good?
    Last night I made what my Mum called mince soup though it's more of a stew/porridge. Savoury mince (from the freezer), rice, stock and greens ( I used frozen spinach) cooked together served with grated cheese and bread to dip. Blooming lovely was too and of course there's LOs which I'll have for lunch. Tonight it's chicken, parsley and tomato wraps from my new cookbook.

    I was thinking of doing that instead of potato salad as I'm using the air fryer for the chickpeas anyway! They are very nice done in the AF with some spray oil. I need to stock up on more potatoes as that is my last tin. I buy the Growers Harvest new potatoes from Tesco and they are good value.

    Blue skies today although by this evening it had got a little chilly 

    A pottering morning doing housework then after lunch I helped an elderly friend attach some documents to an online form and stayed for a couple of hours.  My sister came around after dinner for the evening

  • @Farway - if you put walnuts and raisins or currants in the banana bread it should count for at least two more.

    Wet & dull start to the day, not one for walking unless wrapped up, better for sitting in a café looking out.

    I read about this & tried it awhile back, a disaster :'( , they exploded as they heated up :o . Presumably high water content turned to steam & bang.:smile: 
    I was using Asda cheapo Essentials, maybe another brand works better? Like Tesco's reading Wednesdays post.

    Not got round to lime curd making yet, waylaid with volunteer website problems, the standard internet problem of ten minute fix but still going in circles after a couple of hours.

    Lunch, stale bread is piling up, so it's toast + something
    Dinner, last of the Coronation chicken, plus nuked jacket spud & maybe a bit of salad

    I have lots of leftovers in the fridge to use up today. I defrosted the rest of the blueberries overnight. I have a small bowl of a bean and sun dried tomato dip I made, some crackers, one English muffin and the last of the lettuce and tomatoes and the pickled onions. I'm not sure what to make with that. I will have to look in the freezer at what is left there too.

    It is pouring with rain and gloomy today.

    Good morning everyone,
    Happy St Patrick's day.
    I think I'll give the AF tinned spuds a miss then Farway, though I've oven roasted them before and that worked okay. Hopefully Wednesday had better luck.
    The chicken flatbreads were gorgeous, sadly no LOs after DS2 had seconds! Fridge rake for lunch. Roast pork dinner tonight using a small piece of pork shoulder.
