Love salmon!!! I've had it for breakfast the last 2 days. I like it plain grilled with a couple of small fresh tomatoes - part of my healthy eating kick....
Was disappointed to see the fish counter had already shut when I made it to Tesco on Saturday and then was pleasantly surprised to see that they had put all the portions of salmon in individual sealed bags. I bought 2 (hence 2 breakfasts) and have been kicking myself ever since as they would have been so easy to pop in the freezer. I normally check whenever I'm in Tesco and if they have a deal on will buy a whole side and ask them to portion and bag it up. But this was much easier. Might go back there next Saturday - think the fish counter closes at 1 pm so if I aim for 2 I might get lucky again.
OH is predicting pasta for dinner but also intends to go shopping. Does anyone have any good bread and butter pudding recipes? I have a small crusty loaf from olio i plan to turn into one. I have semi skimmed milk, condensed milk and evaporated milk. Oh and some open oat milk.
Raisins, also some dates and prunes i think (trying to recall contents of bakin cupboard)

I poached the salmon in milk with some salt n pepper and fresh dill. I took it out and then cooked the potatoes in the same milk. Mashed that down. I flaked the salmon so it still had some chunks to it. The added more dill, squeeze of lemon then formed into fish cakes using flour, egg and breadcrumbs
I will fry them off to crisp them up. Served with sweet potato fries and peas. I’ve made my own (well kinda) mayonnaise. I’ve basically mixed mayonnaise with lemon and dill.:money::rotfl::T2 -

I posted this last week....Bread Pudding (as it’s called in Canada)
Butter 4 – 6 slices of bread and lay in baking dish
Mix:
- 2 eggs
- 3 tbsp white sugar
- 1 tsp vanilla
- 1 cup milk
- 1 tsp salt
- ½ cup raisins or tin of drained crushed pineapple (my fav but I think any fruit would work)
Pour over bread and let sit for 3 hours
Place in a cold oven, sitting the baking dish in a pan of water.
Bake at 300f or 140c for 1 hour or until it’s well set and golden brown on top.
